PORK STEAK

Ingredients:
4 to 5 pieces pork chops
5 tablespoons soy sauce
2 pieces lime or 1 piece lemon
½ cup cooking oil
2 medium onions, sliced
1½ cups water
1 tablespoon granulated white sugar (optional)
Salt (optional) and pepper to taste

Instructions:
Combine pork chops, soy sauce, and lime juice (katas ng lemon) in a large bowl or container. Marinade for at least 1
hour.
Heat a pan then pour-in cooking oil. (kailangan mainit ang mantika bago ilagay ang mga marinated pork.)
Pan-fry the marinated pork chops in medium heat for 3 to 5 minutes per side.
ON THE SAME PAN (na mataas) : Remove excess oil. Pour-in the remaining marinade (yung ginamit na marinade) and
water and let boil. Simmer for 45 minutes or until the pork is tender. Note: Add water as needed.
Add-in the sugar, salt, and pepper then stir. (iaadd kapag kumukulo na)
Put-in the onions and cook for 3 minutes more. (iaadd onions then takpan to cook it)
Turn-off heat and transfer to a serving plate.
CHICKEN BREAST

Ingredients:
2 boneless, skinless chicken breasts (about 1 pound total)
3/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 tablespoons canola oil
1 tablespoon unsalted butter

Instructions:

Pat the chicken dry and season with salt and pepper. Thoroughly dry the chicken on all sides with paper towels. Season
with the salt and pepper on all sides.

Heat the oil over medium-high heat in a large skillet. Heat the oil in a 10-inch or larger skillet, preferably straight-sided
and not nonstick (cast iron is a great option), over medium-high heat until shimmering, about 3 minutes.

Carefully add the chicken to the hot pan and cook for 5 to 7 minutes. Swirl the pan just before adding the breasts to
evenly distribute the oil. Add the chicken one at a time and do not touch, poke, or move the chicken for 5 to 7 minutes.
If you try to turn the chicken and it feels stuck, it isn't golden and crispy or ready to flip.

Flip the chicken and cook until it reaches 165°F, 5 to 7 minutes more. Flip the breasts over and add the butter right
between them. Pick up the pan and give it a gentle swirl to distribute the melting butter. Cook until they reach an
internal temperature of 165°F, cook 5 to 7 minutes more.

Slice and serve. Remove the chicken breasts to a plate or clean cutting board. Let rest for 3 minutes before slicing and
serving.
SINIGANG NA HIPON

Ingredients:

1½ lb or 0.6 kg shrimp (with head)


1 bunch water spinach (kangkong), cut in 3 inch length
1 cup string beans (sitaw), cut in 2 inch length
2 pieces medium-sized tomatoes, quartered
1 large white onion, quartered
8 cups water
1 pack sinigang mix (tamarind soup base mix), about 1.4 ounce or 40g
2 pieces banana pepper (berdeng sili)
3 tbsp fish sauce

Instructions:

Pour the water in a large cooking pot and bring to a boil.


Add onions and tomatoes and cook until texture becomes soft. (hintayin lumambot)
Put-in the sinigang mix and simmer for 2 minutes.
Add the banana pepper and string beans and simmer for 3 minutes.
Add the shrimps and fish sauce then simmer for 5 minutes.
Add the kangkong (soak sa soap then turn the heat off agad and cover the pot.) Let stand for 5 minutes.
Serve hot. Share and Enjoy!
BURGER STEAK

Ingredients:

(for the Burger Steak, aka Salisbury Steak)

1 lb. ground pork


1 lb. ground beef
3/4 cup bread crumbs
3 tablespoons fresh milk
2 tablespoons Worcestershire sauce (or soy sauce)
1 tablespoon onion powder
1 teaspoon garlic powder
1/2 teaspoon ground black pepper
2 teaspoons iodized salt
1 egg
2 tablespoons cooking oil

(for Mushroom Gravy)

1/2 cup butter


1/3 cups sliced button mushroom
1 3/4 cups water
1 beef cube
6 tablespoons all-purpose flour
Salt and pepper to taste
Instructions:

(for Burger Steak)

Pagsamahin ang ground beef at ground pork. Kapag bahagyang nahalo na, ilagay na ang soy sauce, pepper,
onion powder, garlic powder at salt. Haluin.
Ilagay ang fresh milk. Haluin.
Ilagay ang bredcrumbs at haluin. Icrack ang itlog sa gitna at haluin.
Imold ang mga burger patties. (pwedeng gumamit ng ice cream scoop para uniform ang size)
Initin ang frying pan. Lagyan ng konting oil at hintayin uminit. Iluto ang mga burger patties ng 3-4 minutes per
side.
Set it.

(for Mushroom Gravy)

Initin ang bowl. Imelt ang 1 square of butter. Ilagay ang mushroom na walang liquid at iluto ng 30 seconds.
Lagyan ng salt at pepper at haluin. Set aside.
Imelt ang 2 squares of buuter sa ginamit na bowl. Ilagay ang half size of flour at haluin. Ilagay ang natitirang
half size of flour at haluin.
Ilagay ang beef broth. Haluin hanggang sa lumapot.
Kapag nakuha na ang consistency, ibalik na ang mushroom then stir for 30 seconds-1 minute.
Serve.
PORK NILAGA

Ingredients:

2 lbs. or 0.9 kg pork (belly or shoulder), cubed


1 medium yellow onion
1 medium cabbage, quartered
2 medium potatoes, peeled and cubed
4 pieces ripe saba banana, sliced in half crosswise
6 to 8 cups beef or pork broth (or 7 cups of water and 4 cubes)
1 teaspoon whole pepper
Salt to taste
3 tablespoons cooking oil

Instructions:

Heat the cooking oil in a deep cooking pot.


Once the oil becomes hot, saute the onion. (hintayin lumambot before adding, onion looks like this )
Add the whole pepper corn. Continue to cook for 20 seconds.
Put-in the pork. Cook until the color turns light brown about 3 to 5 minutes.
Pour-in the beef or pork broth. Bring to a boil. Simmer and cover for 45 to 60 minutes or until the pork
becomes tender.
Add the saba banana and potatoes. Stir and cook for 12 minutes.
Put-in the cabbage. Cover and cook for some minutes. Add salt or fish sauce to taste. Stir. Cover and continue
to cook for 3 minutes.
Transfer to a serving bowl. Serve with a spicy fish sauce dipping sauce.
