4-203.11 - TEMPERATURE MEASURING DEVICES, FOOD - ACCURACY
Observation: (CORRECTED DURING INSPECTION): Both metal stem thermometers are at least 10 F out of
calibration.
Corrective Action(s): Calibrate or replace thermometer. Action Taken: Both thermometers were calibrated.
Code citation: (A) Food temperature measuring devices that are scaled only in Celsius or dually scaled in Celsius
and Fahrenheit shall be accurate to ± 1°C in the intended range of use.
(B) Food temperature measuring devices that are scaled only in Fahrenheit shall be accurate to ± 2°F in the
intended range of use.
5-202.12 (A) - HANDWASHING SINK, INSTALLATION
REPEAT OBSERVATION (CORRECTED DURING INSPECTION): Hot water is not available at the
handwashing sink.
Corrective Action(s): Provide a water temperature of at least 38°C (100°F) through a mixing valve or
combination faucet. Action Taken: Mixing valve was adjusted to provide hot water at the handwashing sink.
Code citation: (A) A HANDWASHING SINK shall be equipped to provide water at a temperature of at least
38°C (100°F) through a mixing valve or combination faucet.
