Chicken Veggie Salad

In Creamy Yogurt Dressing

INGREDIENTS:

SALAD MIX: DRESSING:


2 cups lettuce 1/2 cup mayonnaise
1/2 cup carrots 1/2 cup plain yogurt
1/2 cup mushrooms 1 tsp lemon juice
1 stalk of celery 3 tbsp honey
1 cup boiled chicken breast 1/4 cup mashed baby potatoes
1/4 cup steamed malunggay leaves salt & pepper to taste

PROCEDURE:
1. Mix all the dressing ingredients in a small bowl. Set aside.
2. In a big bowl, put the chicken and all the veggies except the malunggay.
3. Drizzle the dressing over and gently toss to coat the salad.
4. Plate the salad and garnish with steamed malunggay leaves.
