OREO CUPCAKES

250g self raising flour


oreos 1 pack normal
350g butter
330g caster sugar
80g cocoa powder
2 tsp baking powder
6 eggs

Icing
200g icing sugar
100g butter
oreos 1 pack small

Basic ingredients like eggs & Milk & butter

how much butter:


vanilla cupcakes: 200g for cake, ganache doesn’t need butter
coffee cupcakes: 200g for cake, cream doesn’t need butter
oreo cupcakes: 375g butter (175 for cake, 200 for icing)

total: around 775g

how much eggs:


vanilla cupcakes: 4 eggs
chocolate cupcakes: none // mix
oreo cupcakes: 3 eggs

total: 7 eggs

VANILLA CUPCAKES​ with white chocolate ganache


(slight variation in recipe)

1kg self raising flour


6 tsp vanilla extract
2 cup caster sugar
300g butter
8 eggs
800mL milk

ganache
675g white chocolate melts
35% cream full cream

1. Step 1
2. Preheat oven to 180°C. Line 24 1/3 cup (80ml) muffin pans with patty cases.

3. Step 2
4. Cream the butter, sugar and vanilla bean paste with an electric mixer. Add the
eggs, one at a time, and beat until just combined. Add the flour and milk in
alternate batches and stir with a wooden spoon until just combined.

5. Step 3
6. Spoon mixture evenly among the patty cases. Bake for 15-20 minutes or until
cooked through. Remove from oven and transfer to a wire rack to cool
completely.
