In the journal of agricultural technology in 2011, vol7 (1) describes the chemical compounds
found in dried Cajanus albicans seeds. Firstly, this journal shows 3 tables describing the
proximate composition (table 1), protein fraction (table 2), and fatty acid composition (Table
3). From Table 1, Flour of Cajanus albicans seed contained high amount of total
carbohydrates, crude protein, and crude fiber on dry weight base about 52.12; 21.35; and
7.23%, respectively. The food energy value of the seed was 1783.92 kj. The content of
proteins, lipids and NFEs are rich in seeds naturally.
In table 2, The protein fractionations of seed Cajanus albicans contain 12.95 and
8.64g / 100g, respectively on dry weight basis. But other protein fractions
component as prolamines and glutelins are very low. It can be argued that this
greatest protein fraction can affect the chemical properties of Cajanus albicans.
However, not as much globulin and albumins are found in chicken eggs. This
protein fraction is very potential to be consumed as a vegetable protein so it can
replace the consumption of animal protein.

fatty acids (Table 3). Kelima jenis asam lemak ini termasuk asam lemak tak jenuh

percentage compotition is highgest of palmitic acid sebesar 34.87% than other
fatty acids yang diperoleh. The occurence of unsaturated fatty acids, which
account for more than 60% of the seed lipids were compared with some other
legumes. Asam palmitat ini termasuk asam lemak jenuh tersusun dari 16 atom C.
Biasanya asam palmitat banyak ditemukan padaa tanaman kelapa dan sawit.

2. Data on selected mineral composition of Cajanus albicans seed meal


The seeds were found to be a potential source of minerals (Table 5) such as
calcium, potassium, magnesium, manganese and copper more than the
previous work of Duke (1981) in the legumes of Phaseolus lunatus,
Leucaen leucocephala and Lathyrus sativus and in comparison with
recommended dietary content is more than in the legumes of Abrus
precatrius and Cassia obtusifolia as stated by Mohan and Janardhanan
(1995).

3. The anti-nutritional factors of seed flour are presented variably in Table 6. The
seed contains relatively higher amount of 3.76 and 1.32 g of total free phenols
and phytic acids, respectively, but The contents of tannin and non-protein amino
acids L-DOPA are found to be very low. All the antinutritional factors reported
except L-DOPA are heat labile. Hence they can be removed by wet or dry
thermal treatments.
