Cranberry Fruit & Nut Bread

1 cup cranberries, ground


½ cup walnuts
1 tablespoon orange zest

2 cups all-purpose flour


1 ½ teaspoon baking powder
1 teaspoon salt
½ teaspoon baking soda

1 cup granulated sugar


2 tablespoons shortening
1 egg

¾ cup orange juice

1. Preheat oven to 350F. Grease a 9x5x3 pan


2. Mix flour, baking powder, baking soda & salt.
3. Cream sugar, shortening and orange zest in a Kitchenaid mixer.
4. Add the egg and blend thoroughly.
5. Add the orange juice and then the dry ingredients. Do not
overmix!
6. Put batter in the pan and bake for one hour or use muffin liners
and a yallow scoop to fill about 7/8ths full.
7. Let cool 15 minutes.
