Lemon Chiffon Cake

Ingrdients

2 1/4 cup cake flour


1 tbsp baking powder
½ tsp salt
1 cup sugar
½ cup oil
¾ cup water
7 pcs egg yolk
1 tsp lemon extract
1 cup egg white
½ cup sugar

Procedure:
Preheat oven to 325F

Sift flour, baking powder and salt three times. Add sugar. Put them in a bowl and
make a well in the center add oil, egg yolks, water, lemon extract and lemon
rind(optional). Stir at low speed until smooth. In separate bowl, beat egg until
mixture is stiff and formed. Fold egg yolk mixture into egg white mixture until
mixture is well folded. Pour mixture into 9inch round pan lined with grease and
glacen paper.
Baked for 30-45 minutes or until it done. Serve hot or chilled.
VANILLA CHIFFON CAKE

Ingredients
Set 1
2 1/4 cup cake flour
1 cup sugar
1 tbsp baking powder
1/4 tsp salt

Set 2
8 pcs egg yolk
3/4 cup water
1/2 cup oil 2 tsp vanilla

Set 3
8 pcs egg white
1/2 tsp cream of tartar
1/2 cup sugar

BUTTER CREAM
1 pc egg
1 cup powdered sugar
1 cup shortening
1 cup butter
1 tsp vanilla
Method
1. Preheat oven at 350F
2. Combine all set 1 ingredients. Set aside
3. Combine all set 2 ingredients. Mix set 1 and set 2 together. Set aside
4. Prepare for meringue beat egg white and cream of tartar at high speed and
gradually add sugar.
5. Finally combine the batter mixture and the meringue together.
6. Bake for approximately 20-30 minutes
7. Its time to prepare for the buttercream Combine all ingredients in the mixing
bowl.
CREAM PUFF

Set 1
1cup water
1/4tsp salt
1/2bar butter
1cup all purpose flour
3-4eggs

Set2 cream filling:


1cup fresh milk
3/4cup sugar
1pc egg yolk
1 1/2 tbsp flour
1/2 tsp vanilla
1/4 tsp salt
2tbsp butter

Set3
1cup sugar
1/2cup water
1/4tsp cream of tartar

Procedure
1. Preheat oven at 350F
2. Boil water add salt and butter
3. Add flour and egg one at a time in the mixture to form a dough.
4. Bake for 20-30mis until dough puff
5. Filling: combine all ingredients in a saucepan constantly stirring at low fire.
6. Combine all ingredients in saucepan to caramelize the sugar under low fire.
7. Pipe the filling unto bake dough and glaze.
Butter Cookies
Ingredients:
2 ½ cups All Purpose Flour
1 tsp Baking Soda
1 tsp Cream of tartar
¼ tsp Fine Salt
1 cup Butter
1 cup Sugar
1 pc Egg
1 tsp Vanilla Extract

Procedures:
 Beat the butter, add sugar, mix in butter and eggs. Beat the butter until
creamy, 2 minutes. Add the white sugar, beat for 2 more minutes. Mix in the
butter and the egg.
 Whisk dry ingredients, stir into sugar butter mixture: Vigorously whisk
together the dry ingredients- the flour, baking soda, and salt- in a separate
bowl. Stir the dry ingredients into the sugar butter mixture.
 Preheat oven to 350 F
 Shape into balls, flatten with a fork: Shape the dough into 1 ¼ inch balls. Place
the balls of dough about 3 inches apart on ungreased cookie sheet. Flatten in
crisscross pattern with a fork.

Chocolate Chip Cookies

Ingredients:

2 ¼ cups All Purpose Flour


1tsp Baking Soda
¼ tsp Salt
1 cup Butter (softened)
¾ cup Granulated Sugar
¾ cup Brown Sugar
1tsp Vanilla Extract
2 pcs Eggs
2 cups Chocolate Chips
1 cup Nuts
Procedures:
 Mix the dry ingredients: In a small mixing bowl, combine the flour, milk
powder, salt, and baking soda and whisk to mix. Set aside.
 Mix the sugar and the butter: With an electric mixer or in a stand mixer with a
beater attachment, beat together the granulated sugar, brown sugar, and
softened butter on medium speed until combined, 30 to 60 seconds. Pick out
any large pebbles of hard brown sugar that you see. Scrape down the sides of
the bowl and the beaters.
 Mix in the eggs and vanilla: Add the two eggs and vanilla to the butter-sugar
mixture and beat at medium speed until no clumps or streaks remain, 10 to 20
seconds. Scrape down the sides of the bowl and the beaters.

Chocolate Crinkles

Ingredients:

½ cup Melted butter


6 tbsp Cocoa Powder
1 1/3 cup Sugar
2 pcs Whole eggs
2 tsp Vanilla
2 cups All Purpose Flour
2 tsp Baking powder
¼ tsp Salt
½ cup Confectioner Sugar

Procedures:

 Beat together cocoa powder, white sugar: In the bowl of an electric mixer
fitted with the paddle attachment (or beat by hand with a wooden spoon) beat
together the cocoa powder and white sugar until it comes together into a
shiny, gritty, black dough of sorts.
 Add eggs, one at a time, add vanilla. Add the eggs, one at a time, mixing for
30 seconds each. Add the vanilla and beat in thoroughly.
 Whisk together flour, baking powder, salt. Ina separate bowl, whisk together
the flour, baking powder, salt.
 Beat dry ingredients into cocoa oil mix. Mix into the chocolate mixture on low
speed until just combined. Do not overbeat.

MACAROONS
Ingredients:
1 ½ cup ckae flour
1tsp baking powder
1bar butter
1/2cup sugar
2pcs eggs
2cans condensed milk
1can evaporated milk(small)
5cups grated coconut
3cups powder milk

METHOD:
1. Preheat oven at 350F
2. Sift flour and bakingpowder. Set aside.
3. Beat butter for 5 minutesor until limps are removed. Add sugar gradually white
beating.
4. Add 2cans condensed milk and 1 small can of evaporated milk while beating at
low speed
5. Combine wet mixture ito dry mixture while gradually mixing the preparation.
6. Stir 5cups of grated fresh coconut and powder milk. Stir until well blended.
7. Pour mixture onto greased 1 to 2 inch muffin pans
8. Bake 20 to 25 minutes
CHEESE CUPCAKE
Ingredients:
1 bar butter
½ cup sugar
3 pcs eggs
2 cans condensed milk
2 ½ cup all purpose flour
1 cup cake flour
2 tsp baking powder
1 bar cheese (1/2 for batter and ½ for toppings)

Method
1. Preheat oven at 350F
2. Beat butter, sugar,eggs and milk until fluffy.
3. Combine and sift flour, cake flour and baking powder.
4. Divide ½ bar cheese into two, add ¼ bard cheese to the batter mixture and mix
thoroughly.
5. Combine batter and flour mixture gradually and add 1/4 grated cheese into
mixture.
6. Place baking cups to pan. Pour mixture into pan and top with grated cheese.
7. Bake for 30 minutes at oven temperature 250F.
Lemon tart
Ingredients
Set 1
1 1/3 cups all purpose flour
1/4 bar butter
1/8 bar butter
1/4 cup sugar

Set 2
1tsp fresh lemon juice
½ tsp zest of fresh lemon
2 pcs whole eggs
¼ cup sugar
125 g all purpose flour
1/8 cup shortening

Method
1. Preheat oven at 350F
2. Combine all set 1 ingredients in mixing bowl.
3. Bake for approximate 5 to 6 minutes or until crust is golden brown.
4. Combine all set 2 ingredients in double broiler.
Banana Loaf Bread

Ingredients
2 ½ cups cake flour
2tsp baking powder
1tsp baking soda
½ cups ripe banana(mashed)
2tbsp molasses or honey
½ cup all purpose cream
2/3cup softend butter
2/3cup white sugar
3pcs eggs
½ cup raisins
1/2tsp nutmeg

Method
1. Preheat oven at 350F
2. Grease loaf pans and line with glacen paper.
3. Sift and combine cake four,baking powder, baking soda and nutmeg. Set aside.
4. In a mixing bowl, mash the ripe bananas along with a fork until compleately
smooth. Set aside.
5. Beat butter, add sugar gradually add egg one a time until fluffy.
6. Combine batter mixture and flourmixture gradually. Add banana mixture
alternatlywith flour mixture.
7. Stir in raisins
8. Pour the batter into your prepared loaf pan. Bake for 20 to 25mis at 350F or until a
tester inserted into the centercomes out clean.
9. Remove from the oven and let cool in the panfr a few minutes. Then remove the
banana bread from the pan and let cool completely before serving. Slice and
serve. (a bread knife helps to make that aren’t crumbly.)

Soft Rolls
Ingredients
Set 1
1/3 cup lukewarm water
1 tsp sugar
2 tsp instant yeast

2/3 cup water


¼ cup evaporated milk
1 pc egg
1/4 cup butter

Set 2
2 ½ cup bread flour
1/2 cup sugar
1 tsp salt

Set 3
1 tbsp Shortening for pan
1 tbsp Evap for glaze

Method
1. Preheat oven at 350F
2. Combine water sugar and instant yeast and set aside for 10 to 15 minutes.
3. Combine evap, egg and butter.
4. Mix all ingredients from set 1.
5. Sift the bread flour and combine all ingredients from set 2.
6. Gradually add all ingredients from set 1 and set 2.
7. Knead for 10 to 20 minutes til flexible. Rest for 1 hour.
cut and rest for 30 minutes.
8. Brush the cookie sheet with shortening. Glazed with evap.
9. Bake for approximately 15 minutes.
