A true pilot would do both! Having multiple type ratings gives you a major advantage
over other pilots.
You can do as many type rating as you want. What really matters is your first type
rating. Luckily you don't actually have to choose one. As a fresher with a
Commercial Pilot License you can directly apply for a job. Your employer will send you
to one of their partner type rating training organisations for your type rating.
As always I won't give you a one word answer, there are numerous facts you should
know for a great future as an airline pilot.

You should avoid doing a type rating before you get a job as it reduces the
number of airlines that will employ you. Only the airline with the type of planes you
were type rated on will accept your services.
Coming to the topic of multiple type ratings, you must do another type rating in the
future. Unfortunately 737s won't be there for their 100th birthday, nor will A320s
remain for another 50 years more.
As the the technology progress ahead, cheaper and more efficient planes will replace
A320s and 737s and at that point you have to choose the new guy to continue your
career.
Apart from that, different type ratings come with different salary packages. This is the
reason why pilots often move to bigger planes like the A330 or the 777.
