Haldiram story began over Seventy five years ago in Bikaner, a
small town in Rajasthan where it started a small family
business selling namkeens & sweets out of a nodescript shop
The company is promoted by two 1st generation entrepreneurs
having more than 30 years of experience in this line of business

Challenges faced by Haldiram during more
than 25 years of journey
Haldiram was the first company in India to convert traditional
snacks (Namkeen) from unorganized sector to organized sector.

Challenges:
1. Traditional namkeen was manufactured by hand by skilled
karigar followed by frying in conventional batch fryer.
2. Difficult to get consistency in quality because industry was
depended on karigar. (skilled labor)
3. Production limitations.
4. Shelf life 6days only therefore product can not be distributed
widely.
5. Difficult to maintain hygiene conditions.
How Haldiram overcome from challenges
1. Automation at different stages.
a) Product making – we have done lot of research to develop
special type of low pressure extruder to make the product
without compromising with texture and taste of the product.
b) Frying by special design frying systems to control frying
temperature +/- 1’C in built with PLC system.
c) Fully automization of the process without human touch to
make traditional snacks.(Namkeen)
End result: Fully automation with PLC control without human touch –
same quality, taste and texture. This was made possible by Haldiram after
lot of innovations and research during these three decade.

2. Packaging – lot of innovation/research has been done


in packaging over the years to increase shelf life
and freshness of the product from 6days to 6month.
3. Innovation in products such as development of Aloo Bhujia,
Punjabi Tadka, Diet Namkeens and Frozen Foods for export etc.
4. Process/packaging development for Indian sweets to give the
shelf life from 4 days to 6/9 month.

Haldiram was the first company in India to introduce branded
namkeen in flexible packaging film in 1990, lot of innovations has
been done in packaging film such as..

1. Four layer structure flexible packaging film for namkeen to


give shelf life of 6 month.
2. Packaging of Indian sweets in Tin packaging to give shelf life
of 6 month.
3. Packaging of syrups in glass bottles to give the shelf life of 9
month.
4. Packaging of Ready to Eat food in retorted pouch to give the
shelf life of 1 year.
5. Packaging of Frozen foods to give the shelf life of 18 Months.
6. Zip pouch in bigger namkeen pack for consumer convenience.
Packaging has revolutionized the product shelf life and freshness
from 6 days to 6 month which is the biggest reason of the growth
of traditional snacks
