MERANAW FOOD: “PISASATI or TUNA FISH CAKE”

Recipe:

1. Cook a blue finned tuna by smoke using a traditional method of barbequing. Alternatively,
you could get a ready-made smoked tuna in Mapantao, Balo-I – this place is known for
their expertise in smoked tuna.
2. Slice the smoked tuna flesh into 4 by 4 cubes. Take out the bones and tail.
3. Using a fork, rip apart the smoked tuna flesh into smaller pieces.
4. Slice up into fine cube pieces the following: red pepper, green onion leaves, red onion, and
garlic.
5. Prepare the following seasonings: iodized salt, black pepper powder, chili powder, and
paprika powder.
6. Prepare the following additional ingredients: fresh coconut milk, freshly juiced grated
coconut flesh, and mashed palapa.
7. In a mixing bowl, put ripped smoked tuna flesh, grated coconut flesh and milk. Mashed
them together until you get a squishy texture.
8. Mix in the mashed palapa, finely sliced red pepper, green onion leaves, red onion, garlic,
and the remaining seasonings according to your taste. Mix it all and it must maintain a
squishy texture.
9. Using the front spoon, shape the mixture in small cake like. Alternatively, you could use a
polvoron or cookie cutter as a molder of this.
10. Heat the pan with a cooking oil and fry the cake until brown in color. Note: not golden
brown but brown. After cooked, the cakes can be kept for 3 days in tightly sealed container.
Do not refrigerate.
