‘Enhancing food functionality can provide impressive opportunities to support human
health & wellness. The potential of preventative nutritional strategies is considerable, as illustrated in this presentation by some striking examples. Such examples include the relevance and benefits of vitamin and mineral fortification, reducing levels of unwanted micronutrients, and adding novel functional ingredients for e.g. bone health, post menopausal health, metabolic syndrome and infant nutrition. Health economic implications will be discussed and strategies for obtaining enhanced functionality products will be listed. This presentation will illustrate that today, the full potential of food for human health is far from being fully exploited.’
