Organoleptic
Clear, white and almost transparent colour. Faint floral aroma with shortlasting starchy notes.
Sweet, unique and highlyrefined flavour with no other contributions to taste. This honey is
highly valued because it does not tend to crystallize. It is the honey which is best tolerated by
children and diabetics.
It can be distinguished from all other flower honeys by its dark amber colour, almost black,
which is not typical of flower honeys. Floral aroma with fruity notes. Sweet flavour with salty
notes, thanks to its high mineral content. Slow to crystallize, often becomes defective due to its
high moisture content.

characteristics. Crystallizes easily.

slightly bitter notes. If it contains blackberry it may have slightly acidic notes. Crystallizes little.
One of the darkest and most intenselyflavoured honeys, very rich in iron. It tends to crystallize
slowly and little.
Usually a light, golden amber colour. The purer it is, the lighter it is. It has an unmistakable,
very intense lavender scent, as well as aromatic phenolic notes. It has a sweet flavour with acidic
notes and occasionally salty notes if it contains honeydew. Mediumlevel crystallization in very
small crystals.
Light amber in colour. If it contains other plants the colour will darken to an amberochre
colour. It also contains light hints of green. It has an intense and lingering aroma, reminiscent of
damp wood. It has a sweet flavour with slight acidic notes. Mediumlevel crystallization with

moisture content; as a result, crystallization is slow and bad, eventually leading to fermentation.
