Guaranteed reservation is reservation in which the hotel commit
the guests to pay for a room night and the hotel will provide
accomodations, regardless of arrival time. If the guests do not arrive
(without cancellation), the hotel may process a credit-card voucher for
payment. Likewise, no matter when the guests arrive on the reserved
night, the hotel must have the reserved accomodation available. The
guaranteed reservation requires the hotel to determine the method of
guests payment. They may pay full of the payment, pay only for a
night first, or use credit card.
In short, some types of reservation above can be used to make the
guests easier in booking a hotel. They can use them appropriate with
their necessity; moreover, through reservation, the guests do not need
to be worried about the room, whether it is available or not.

Food and baverage service is part of the hotel that provides, sells
and serves food and drinks with satisfying services to guests /
customers. This division is divided into several parts which are
basically divided into preparation and production and service and
sales.
The motion space for the food and beverage deparment is divided
into two space functions, namely: Space / area that can generate profits
called revenue producing areas and Space or area that provides
support in services such as the kitchen (kitchen), public warehouse
(store), etc. The scope of revenue producing areas includes:
Restaurants are one of the "outlets" of the food and beverage
deparment whose function is to sell and serve food and drinks to hotel
guests, both those who stay and those who do not stay overnight,
restaurants. there are several types such as: Dining room, Coffee shop,
Grill room, Specialty restaurant, and Supper club.
Bars are places where guests can order and enjoy both alcoholic
and non-alcoholic drinks, there are two types of bars in general, public
bars and service bars.
Room service, is one outlet that has a function main to serve
ordering food and drinks to the room guest.
The function room is a place that is used for various purposes
kinds of activities such as parties, meetings etc.
When viewed from its organizational structure, food and baverage
departments are led by Food & Beverage Director, Helped by Chef De
Cuisine and Assistant Food & Beverage Manager also staff to reach
destination set by the hotel.
this is a description of the duties and responsibilities of each
position in the food and beverage deparment, namely:

1. Food & Beverage Director has duties and responsibilities:
Establish menus, presentation systems, sales strategies,direct
implementation and assess success. Formulate policies for
controlling operational costs. Deal with problems that require
handling directly. Creating a harmonious relationship with
colleagues and Customer.
2. Assistant Food & Beverage Manager has duties and
responsibilities: Coordinating the implementation of inter kitchen
activities, F & B. service and stewarding. Assess work
performance. Give direction and instructions to subordinates.
Handle problems that require handling directly and report to the
boss.
3. Restaurant & Bar Manager has duties and responsibilities: Handle
and supervise directly the services of VIP guests. Creating and
fostering a healthy working atmosphere. Organizing daily
briefings. Helping to make F & B sales report monthly report.
4. Head Waiter has duties and responsibilities: Directly handle VIP
guest services (Very important Person). Accompanying sous chefs
in structuring buffets. Supervise subordinate discipline. Handle
guest problems. Assess work of subordinates.
5. Assistant (Head Waiter Captain) has duties and responsibilities:
Helping the head waiter carry out his duties. Supervise and help
smooth the implementation. service for selling and serving food
and beverages. Supervise and direct the smooth service of
subordinates
6. Waiter / Waiter has duties and responsibilities: Prepare complete
technical services. Do services directly to guests. Take guest orders
/ orders from the captain to continue to the kitchen. Carry out the
presentation of dishes to guests. Carry out and follow the orders of
the captain in running his duties.
7. The Chief Bartender has duties and responsibilities: Keep an eye
on storage, use bar stock. Keep an eye on fluency, the accuracy of
implementing mixing drinks, presentation, sales and service.
8. Room Service Order Taker has duties and responsibilities: Handle
receipts, record room service orders and deliver to room service
captain. Suggest and assist guests in menu selection. Receive guest
complaints and report to the head waiter.

Asking the room key to the guests. There are three purposes: to
make sure that the guests has checked-out, as the professionalism
of the front desk agent, and avoid buying or making new similar
key for the room.

August 1998. She is a student of
English Teaching Learning
Department in IAIN Madura since
having graduated from MAN
Pamekasan in 2016. Now, she is at
the fifth semester. This girl who
likes reading and drawing, has a big
dream to be a lecturer and
businesswoman.

The English for Hotel book XI is designed to help the students
of hotel vocational high school in learning English. The focus of
this book is to improve the students’ ability, knowledge and
skill in reading, speaking, grammar, and writing. The four
points are:
Reading: help the students to comprehend the content of a
text, completed with some exercises.
Speaking: help the students to know some kinds of
expression and practice it.
Grammar: help the students to understand more about the
rule of English. It also provides some exercise to measure
the students’ understanding
Writing: help the students in recognizing some kinds of
text and practice it.
