Resumen: “Poultry”

Poultry is described as the process of domestication of wide types of bird


breeds that are raised for the human consumption. From the main bird breeds that
are use in poultry are chicken that is one of the most consumed meat around the
world, duck, goose, guinea, pigeon, turkey and ratites. Most of these animals have
common structure, the main differences are the sizes and uses of its meat depending
on the cooking techniques. Chicken that is one of the most common bird in poultry
is known for being part of the group of main meats such as pork or beef. The main
characteristics that made the chicken such a good option for meat consumption is
being not as expensive as different types of red meat, and its high nutritional values,
such as 18-20% protein.
Chicken by itself give a lot of consumption options. It could be found red or
white meat, each one with differences such as content of fat, connective tissue or
myoglobin. Also, chicken is classified by the weight and relate with the time in weeks,
this give a certain amount of meat, fat and cooking method for taking the most
advantage out of it. Chicken could be cook grilled, fried, roti, roasted or confit. Each
one of the cooking methods give chicken a different texture, even each method could
be use for giving extra flavor to the chicken, such as roasted with different spices.
