Ratatouille

Ingredients
(Serves 4-6)

• 2 tbsp Basil, fresh leaves

• 1/4 tsp Dill, dried

• 2 Eggplant, medium

• 4 cloves Garlic

• 1 Green pepper, medium

• 2 tbsp Oregano, fresh

• 1 tsp Thyme, dried

• 4 Tomatoes, medium

• 2 Yellow onions

• 4 Zucchini, small to medium

• 1 Pepper, medium yellow

• 2 tbsp Olive oil

Heat Olive Oil on Medium high heat. Be careful not to burn. Dice and/or slice above vegetables and
place in a large iron skillet. Cover and reduce head to low. Cook until vegetables are tender and
almost caramelized. Cooking time will vary greatly depending on the thickness and size of your
vegetable pieces.
