Basic Beef Meatball
Ingredients (46 Servings)
● 2lb. eat (I use ground beef shoulder)
● 2 tsp. kosher salt
● 1/2 cup breadcrumbs
● 2 eggs
● "Healthy dollop" of ricotta cheese (see video for details!)
● 1/4 cup chopped fresh parsley
● 1/4 cup chopped fresh oregano
Tips
Cook at 425 degrees for 17 min to cook 46 portions to PERFECTION.
“Super Simple” Vegetarian Tomato Sauce
Ingredients (46 Servings)
○ 1/2 large yellow onion, medium diced
○ "Healthy" 1/2 cup of light, classic, olive oil
○ 1 garlic clove, crushed and lightly chopped
○ 1 fresh bay leaf
○ 1 tbs. tomato paste
○ 23 branches of fresh oregano
○ 1 pinch of chili flakes
○ 3 ladlesfull canned whole peeled tomatoes
○ Salt to taste
Tips
You want to cook this in a heavybottom sauce pot, at medium heat, to be sure sauce won't
burn.
