Royal Chitralada project reflections
We went to royal chitralada project on Friday 15th February 2019. We went out of the
school at 7.30 am. By 2 buses. When we went for trip and reach there we start to view all
the factory process, in royal chitralada we saw 5 milk types there are pasteurize milk,
UHT (ultra high temperature) milk , cheese, milk tablet and milk powder. This royal
chitralada project is prototype project that made by king rama 9 that has purpose of
reducing milk oversupply in the market and the store by making milk product to be more
interesting.
First we went to pasteurize milk in the first section of the factory royal chitralada project
receive milk from 4 places that is cooperative there are Nongpho, Chokchai , muak lek ,
Huay sut yai. There are 3 standard form to use to test milk quality for next station of
milk. First is to check PH, fats, protein and solid non fat. The second is microbiology
like the antibiotic, metalin blue. Third is the physical test like color, smell and taste. After
the taste milk will go to send to reduce temperature to be less then 4 Celsius to prepare
for sending to tank . then the milk will be send to the other machine called homogenizer .
its duty is to mixed milk together then it will rise the temperature of the milk to be 65
celsius degree for 15 second this is call thermisation. There are 2 types of milk plain milk
and flavored milk . plain milk will send directly to the package or container. The flavored
milk will send to mixed the flavor first.
The second milk product that we see is cheese, first they put milk about 200 liters into the
tank then they out rennet inside, it is enzyme that found in the calf stomach to precitipate
the protein in milk or casein. Next is to put the liquid milk out and pack casein into 20
kilograms of casein. These piece will riped into 2 type of cheese cheddar and gouda.
Gouda will ripen about only 1.5 month but the cheddar cheese will make the time of
ripen about 3 month .
The third is milk powder factory. First they use evaporator to separate water from milk
the milk will go pass through the spraydry , it will cause the milk to be dust and the dust
will flow to the tank then send to the next station factory. The water that got separate will
be distilled water for marketing.
The fourth factory is the milk tablet. The milk will go through 4 part that is mixing ,
packing, selecting and packaging. 3 types of the machine that is using in these factory is
powder machine , grinding machine and mixing machine.
The last factory one is UHT or ultra high temperature milk. They use tubular heat
exchanger with 135 to 140 degree for 4-5 second then they will reduces the temperature
by 25 degree Celsius, then the last one they will package the milk into different
containers like plastics bag or box then it is ready to the market ,any shop and any place.
