2. Introduction

Notes on Technical Dimensions and Installation Planning of the Atollspeed Micro-


Convection Oven.
When planning the installation of the Atollspeed, make sure that the installation side (especially
the right side) is permanently accessible. When planning the installation of an Atollspeed in a wall
recess, keep free the following spaces around the baking oven.
Left side: Minimum 50 mm
Installation side: Minimum 50 mm
Rear side: Minimum 50 mm
Upper side oven cover: Minimum 100 mm
If a front casing up to the baking oven edge is required, provide this casing with an easily
detachable faced frame.
If this front casing is to be supplied and installed by a shop equipment company, the above
information has to be taken into account.
During installation and arrangement of the baking oven, make sure that no damages can be
caused by the operation of the baking unit and its charge and discharge pipes, particularly
through the effect of heat. You must pay attention to the required distances and insulations.
If this baking oven is installed near walls, partitions, kitchen furniture, ornamental furnishings etc.,
we recommend that these are made of fire-proof material. Otherwise, they must be encased in
suitable non-inflammable material. Fire safety instructions must be carefully observed.
Wait at least 30 minutes before you start to clean the inside baking chamber and make
sure that it is not hot any more. Otherwise wait longer.
This oven can only be used to heat up food.
Never use the micro-wave function if the baking chamber is empty. There should always
be any liquid or any suitable food in the baking chamber when the micro-wave function is
initiated.
Never operate the oven with loose metal objects inside (knives, spoons, needles, lids,
etc.)! Open stainless steel or aluminium pans, can be used on the stone.

3. Important Safety Instruction

 Read this instruction manual before using this oven. The oven should be used only for
the purpose described in this instruction manual. For other function get the approval from
your local agent or the factory.
 Never use the micro-wave function if the baking chamber is empty. There should always
be any liquid or any suitable food in the baking chamber when the micro-wave function is
initiated.
 Do not block any air fan openings or any others.
 The oven should not be used near water.
 Don’t cook any oil or fry anything inside the oven.

 With the microwave function you cannot cook or boil eggs or sealed container (with food
or liquids) as they may explode.
 Food with skin should be cut with a knife before heating up. (Sausage, apples, pear,
potatoes etc.)
 If a glass container or a bowl is broken DON’T eat the food any more.
 You will get the best cooking result if you put the food in the middle of the oven.
 This oven cannot be stored outside (sunshine, raining).
 The microwave function should not be used to dry towels, clothes, wet papers or warm
up plates.
 If the power cable is damaged, it must be replaced by an approved electrician.
 After cooking, wear gloves or use a fork to take out the food. Don’t touch the inside
housing or the inside door. You can burn your self.
 Do not remove any fixed parts of the oven
 It s not allowed to store anything on top of the oven
 This appliance is not intended for use by persons (including children) with reduced
physical, sensory or mental capabilities, or lack of experience and knowledge, unless
they have been given supervision or instruction concerning use of the appliance by a
person responsible for their safety. Children should be supervised to ensure that they do
not play with the appliance.
 WARNING: If the door or door seals are damaged, the oven must not be operated until it
has been repaired by a competent person!
 WARNING: It is hazardous for anyone other than a competent person to carry out any
service or repair operation that involves the removal of any cover which gives protection
against exposure to microwave energy!
 WARNING: Liquids or other foods must not be heated in sealed containers since they
are liable to explode!
 WARNING: microwave heating of beverages can result in delayed eruptive boiling, there-
fore care must be taken when handling the container!
 WARNING: The contents of feeding bottles and baby food jars must be stirred or shaken
and the temperature checked before consumption, in order to avoid burns!
 WARNING: To avoid scalding, do not use loaded containers with liquids or cooking
goods which becomes fluid by heating in higher levels than those which can be easily
observed!
 Only use utensils that are suitable for use in ovens and heat resistant up to 350ºC.
 When heating food in plastic or paper containers, keep an eye on the oven due to the
possibility of ignition.
 If smoke is observed, switch off or unplug the appliance and keep the door closed in
order to stifle any flames.

 Eggs in their shell and whole hard-boiled eggs should not be heated in ovens since they
may explode even after microwave heating has ended.
 When preparing frozen food defrost with 0% microwave power to avoid damage to
the device.
 WARNING: Concerning possible slippery floor adjacent to the appliance
 On airborne noise emissions, the A-weighted sound pressure level is below 70 dB(A).
 WARNING: Appliances must be disconnected from their power supply during cleaning or
maintenance and when replacing parts.
 The oven should be cleaned regularly and any food deposits removed;
 Failure to maintain the oven in a clean condition could lead to deterioration of the surface.
That could adversely affect the life of the appliance and possibly result in a hazardous
situation.

4. Oven Installation

1) Remove packing material from the oven and put the material in the wastage bin or recycle.
2) The oven has to be set up on an even and flat surface and may not be exposed to any
vibration. Two or more people are required to lift the oven. Don’t lift the oven at the door
handle or the door. The surface place must be able to hold the weight of at least 150kg.
3) Open the cooking chamber door and take out all the material inside the oven chamber.
Thereafter remove the protection film from all the parts before starting the first heating up
process. The chamber must be clean before using the oven.
4) Check the oven for visual damage. If you find any damaged parts, inform the installation
engineer or the agent.
5) The marking of warning sign against danger of scalding has to be mounted after installation
at a height of 1,60 m above the floor.

4.1 Electric connection


Please note that all adjustments to the Atollspeed (connections, repairs
maintenance work etc.) should be carried out only by licensed specialists
who are familiar with the valid and local general regulation.
The electric connection cable must be flexible. It must be in loops so that the
baking oven can also be relocated even when it must be moved forward for
the installation or rear side for inspection reasons.

 Supply lines and fuse protection must be installed to the list. A master switch provided by the
customer is to be fitted into the supply line (all-pole connector).
 Means for disconnection must be incorporated in the fixed wiring in accordance with the
wiring rules.
 For the standard type, the electric connection is carried out via a plug connector. The master
switch is not necessary if the connection is made via a plug connector or an outlet.
 If Atollspeed is installed as a dual-circuit oven (which means that the units are double
stacked), each baking unit required a separate electrical connection of 16 A each.
 The appliance is to be supplied through a residual current device (RCD) having a rated
residual operating current of 30 mA.
 Do not plug other devices together with Atollspeed to the same connection. Do not use Multi
Plug connectors. Risk of cable burns!
 Extension lines must be rated to carry the rated current of the oven and have the according
wire strength 3 x 2,5mm
"Dangerous voltage — to indicate hazards arising from dangerous
voltages. Note in case of application in a warning sign, the rules
according to ISO 3864 shall be adhered to."

Symbol for the external connection of equipotential bonding conductors.

If there is no equipotential bonding conductor in the electric supply, an external


equipotential bonding conductor must be installed at the rear of the appliance (see
symbol).

4.2 Start the oven for the first time


After the Atollspeed has been properly connected, the following points must be accomplished:
 Check if the oven has any outside damage. If you see any damage STOP at this point
and contact your reseller or Kolb.
 The oven has a safety temperature limiter. This can be triggered from vibration during
transport. The result is that the oven does not heat up. So it maybe necessary to reset
the Safety Temperature limiter before the first start up. Therefore, press the red reset
button under the roof hard.
 The baking chamber must be cleaned first with a wet towel. Then heat up the oven to
270ºC and keep this temperature for 30 min. ATTENTION! The oven can be only
heated up without micro-wave function

5. Cooking Speed and Accessories

The Atollspeed produces a combination of high speed forced air convection heating and
microwave energy to cook food.
Due to the combination of several technologies baking and cooking with the Atollspeed is much
faster than with conventional convection ovens.
The high speed of circulated air, combined with microwave energy assures a very fast
heating/cooking process. The exterior of the food will be crispy and the inside will be warm. With
this technology you can serve your customer faster and obtain the same taste as fresh
baked/cooked food.

Accessories Overview

Baking Stone
The Baking Stone allows the product to breath at the
bottom and moisture to escape. The stone has a good
heat retention for a medium browning speed of the
bottom of the product. The heat capacity is big, so
heating up takes longer. It is also good for the evenness
of microwaves and the surface does not wear off.
Therefore, it is recommended to use the stone as a base
when working with exchangeable food containers like
metal pans, plates or aluminium foil. It is also the best
choice when preparing dense products like pies or
lasagne to prevent burning the bottom and allow optimal
microwave performance.
The Baking Stone should stay inside the oven and should
not be exchanged during a baking session. Food scraps
have to be cleaned regularly, but are not a hygienic concern
due to the high temperature.

Silicone Mat (consumable)


If the look of the Baking Stone is a concern the replicable
Silicone Mat can be used on the Baking Stone for easier

cleaning. However, the breathability of the stone is


compromised. Depending on the use of the oven the Silicone
Mat should be replaced monthly. With continued use the Mat
will lose its colour and become white.

The Silicone Mat is self-sticking. Remove cover on the backside before attaching it to the stone.
It is typically used with products that are prepared on the Baking Stone, but a lot of cheese makes
the stone look dirty and difficult to clean.
The silicone mat can also be used on the Hot Spot for easier cleaning.

Hot Spot
The Hot Spot is an aluminium plate that heats up quickly
and browns the bottom of the product faster. The texture
can achieve a Panini Stripes effect and allows moisture or
oil to escape from the bottom. Be careful not to use
aggressive oven cleaners which might damage the plate.
It is most suitable for sandwiches and products that
require fast browning on contact.
The Hot Spot should stay inside the oven and should not
be exchanged during a baking session.
Metal pans or foil cannot be used directly on the Hot Spot
because there might be arching.

Ceramic Coated Hot Spot (optional)


While offering similar baking properties, the extremely
durable ceramic coating on this Hot Spot adds great non-
stick performance, so food does not stick on it and fewer
food scraps/crumbs collect onside the oven. Also cleaning
is very easy and convenient.

Square Aluminium Pan (consumable)


Big baking surface, able to contain grease or liquids
coming out of the food. For example, any meat products,
hash browns, or other products that would normally be
prepared in a pan.
Any pans must be used on the stone.
Do not use abrasive or aggressive means of cleaning to
prevent damage to the pan and the coating. Be careful not
to use aggressive oven cleaners which might damage the plate

7. Operation of the Oven

7.1 How to start Atollspeed


To turn on Atollspeed touch the On-touch button for more than one second.
Then Start up screen appears for three seconds. You have the possibility to interrupt start up and
enter User Settings. Service Mode can only be accessed by authorised service partners. The
USB function is also located on this screen.

If you just wait 3 seconds the Home screen appears and the oven starts to heat up.

7.2 Home screen


Home screen allows the user to start baking instantly or access all functions important for baking
within a few clicks.
 Actual temperature inside the

baking chamber. (Preheat

On this screen NUM-pad is used to enter Time and


Temperature or recall saved programs. For example you
can press number one, then press number four on NUM
pad to enter program number 14 quickly means Group 1,
Program 4.

Preheat Temperature T1/T2


Atollspeed has a preheat temperature T1 to which to oven heats up when it is switched on. This takes
about 10 minutes. Then the oven keeps this temperature until it is turned off again. If a baking program
with different Temperatures is started the oven follows the set temperatures and returns to the preheat

temperature after wards. In general it is recommended to bake all products in a temperature range of
about +/- 10 ºC. Due to the fast baking time bigger changes have little effect, since the tray and the well
insulated baking chamber need some time to adjust temperature. To control convection power it is
much more effective to adjust impingement air speed since it has instant effect and is reproducible.
This preheat temperature T1 can be adjusted in User settings.
Additionally the oven has a secondary temperature T2. With the T1/T2 toggle
button in the top right corner of the screen you can change between those
two preheat temperatures any time. Press the button for one second to
toggle.
This is useful if you want to reduce/ increase the preheat temperature quickly without entering the
settings.
For example if you bake lower temperature breakfast items in the morning and pizza during lunch time
you can set T1 to 240 ºC and T2 to 280 ºC. So when the oven is turned on in the morning it heats to
240 ºC automatically. At 11 o’clock when the breakfast business is over you can press T1/T2 toggle
button for one second to switch to T2, then the oven heats to 280 ºC and is ready for the lunchtime
business with just one click.
To disable this function set T1 and T2 to the same value in user settings, so changing between T1/T2
has no effect.
The preset temperature is 270 ºC, which is suitable for most products.
If your focus is mainly on Pizza – type products you get better results with 280 ºC
If your focus is in very sensitive or dense products you might want to reduce temperature.
If you do not want hot air you can set the temperature to 20 ºC and only use the microwave function.
The catalytic filter for filtering smells and grease only works at high temperatures. It is recommended to
use at least 270ºC.
Set Time
If you have not worked with the oven before typical baking times are
0:30 for reheating pastries and light products.
1:00 for Sandwiches or over baking with cheese
2:15 for frozen pizza
4:00 for meat, potatoes, lasagna, pies, dense products
These are only very rough values. Depending on the amount and ingredients of the food times can be
very different. For more detailed recipes, please refer to Atollspeed Cook Book.

Set Temperature
Since Atollspeed is very well insulated, temperature cannot change very quickly. So setting a
different temperature than the preheat temperature has rather small impact on the baking result.
It is much more effective to change the air speed.

However, if you want to bake a very sensitive product it might still be useful to reduce the
Temperature a bit, or if you want to make something especially crispy increase the temperature
during the baking program.
Set Air Speed
Air speed has a big influence on the baking result, especially on the browning of the surface.
If your product is very sensitive, you can reduce air speed for more evenness. Also very dense
products like lasagne or pies need longer time for the microwave to heat the centre. Accordingly,
the air speed has to be reduced so the surface does not get too dark.
Microwave Intensity
Microwave can be reduced or turned off with the slider. Sometimes it can improve product quality
if microwave power is reduced.
For defrosting or products with very low water content, like toast, microwave power should also
be reduced to 0%. Otherwise there might be a negative effect on the lifetime of the microwave
generator.
Never operate the microwave empty.
Preheat- / Reheat Timer
On the top right of the screen is a yellow/red progress bar, indicating the preheat timer.

Any baking tray from stone, ceramics or metal has a heat capacity to brown the bottom of the
product. But it takes some time to ‘charge’ this heat. So when the baking chamber reaches its
preset temperature the tray might still need a few minutes to reach full temperature. This is
indicated by the preheat timer. You can adjust the Preheat timer in user settings according to
your needs. If you bake sensitive products and see that right after the oven is turned on the
baking result is not good, you can set the timer to 10 minutes for example so you have an
indication when you can start baking with consistent quality.
The preheat time starts to count when Preheat temperature is reached after turning on. When the
preheat time is finished the alarm sound rings to remind you that the oven is ready for baking.

Also after baking the tray lost some heat, so after the food is taken out it is best to close the door
for a moment to reheat the tray. To have an indication here you can set the Reheat timer. Reheat
timer starts to count when the door was closed after baking.

Preheat timer and Reheat timer can be adjusted or turned off in user settings. They do not affect
the function of the oven, but are a visual indicator for the user.
This function can help to achieve a reproducible baking result.

Note: In user settings you can also enable the function “Enforce Preheat Times”. If this option is
chosen programs can only be started when the oven is fully heated up and the waiting time has
passed (the bar is red).
This is to avoid that inexperienced operators turn on the oven, place food inside the cold oven
and start to bake, resulting in a poor baking result and food waste.

7.3 Start manual baking


To start baking with the selected parameters first insert the food, then press the Start button.
Never start baking if the baking chamber is empty, it can damage the machine.
Then the baking screen appears and shows the remaining time of the baking process.

Baking can be interrupted by pressing the stop button.


After baking was interrupted you can either continue or cancel.
Do not continue if the food has been taken out already! It can damage the machine.

Do not use two metal cooking wares together for Atollspeed!


Metal cooking ware should be used on the baking stone.

When baking is finished take out the food and close the door.

Notes: In user settings you can set the alarm repeat time so the alarm is repeated regularly until
the food is taken out.

You can also enable the feature “Visual Alarm”. Then the display flashes bright yellow and black
when the baking is finished as a visual indication. This is useful in loud and busy kitchens, when
multiple units are used (Double-stacked Atollspeed) or for operators with reduced hearing abilities.

7.4 How to start a baking program


On Home Screen press “Programs” button. Then Group list appears.
Select the group, for example G2. Then Group 2 appears. Alternatively you can press the number
2 button on NUM pad to select Group 2. This helps to quickly recall a program according to its
Group and Program number, for example P4 in G1 is Program number 14. Program numbers are
from 11 – 00.

Select the Program you want to bake, for example P0 or the corresponding number on the NUM
pad.

Insert food, then press “Start” to start this baking program.


Never start baking if the baking chamber is empty, it can damage the machine.

7.5 How to save/edit a baking program


To create a new baking program or edit an existing baking program you have to unlock the menu.
To unlock, select the “Lock” symbol on the top of the screen.

Then you are asked to enter the User PIN (default is 000). Enter the PIN with the NUM pad, and
then press Enter. If the pin was correct, the “Lock” Symbol is open any you can edit values,
names and pictures.

To edit the program name tab on the name and enter the letters by NUM pad by pressing each
number several times to choose the letter. Delete with the delete Key on NUM pad.
To delete a single program delete its name to blank, and then save.
To create a new step press where the next empty field for time is, then enter time. To create the
next step the time of the step before must be greater than 0.
Up to 24 Programs can be marked as a favourite for quick access on favourites screen. If 24
Programs are already marked as favourite you cannot mark further programs, you first have to
unmark or delete an older favourite.
The accumulated program counter is a useful tool to keep track of the production of each product.
It counts how often each program was started. The counter counts continuously. To keep track of
the monthly production you can note down the value once per month. You can also check the
number per week, per day or per shift.
The counter is reset to zero if the program is deleted.

7.6 Editing a group name


When the program List is unlocked you can also edit the Group name. Tab on the name, and
then enter the letters with NUM pad. Wait three seconds, then the new name is saved.
Editing will lock itself automatically as soon as you leave the Group or start a program.

7.7 Favorite programs


Programs that are marked with the favourites star can be accessed by entering the favourites
screen by pressing the “Favourites” button on Home screen.

To bake, select a program by touching the tile. It will be framed red, then press “Start” to start the
selected Program.
NEVER start baking if the baking chamber is empty, it can damage the machine.
If a baking program has no picture assigned, an orange number will be displayed on Favorites
screen as a clear, universal reference. The 12 slots of the favorites screen are numbered from 1
in the top left corner to 12 in the lower right corner.
If you have more than 12 Favorites, an arrow appears on the top tight of the screen, which allows
you to access the favorites 13 to 24 conveniently.
Programs on the favorites screen are arranged in the sequence they are added as a favorite. If
you want to change the sequence or arrangement you can unmark the programs and mark them
again in the right sequence.

In the bottom left corner of each favorite a small two digit number is displayed. This shows the
program number of the favorite (for example “26” is Group 2, Program number 6). This helps you
to find the program easy if you want to edit or remove it.

Favourites screen also has a locking symbol. You can Lock Favourites screen with the user pin.
Then Home screen and the Program lists cannot be accessed any more, making the operation
very simple. When powering on the oven it directly goes to Favourites and the user can just bake
the programs shown and power off. He does not have to navigate any other screens and cannot
change any programs or settings.

7.8 Power off the oven


To power off the oven press the power button for more than one second.

Then choose the options for shutting down.


If you select “Cleaning” the oven cools down the baking chamber to 40 ºC. Afterwards the alarm
sounds and you are instructed to clean the chamber. For detailed cleaning instructions please
see chapter 10 “Cleaning”.
If you select “Power OFF” the oven will start cooling down to 100 ºC, which is a safe temperature
for the oven components. Then the oven turns off automatically. After you choose “Power OFF”
no further input is necessary.
After this the cooling down screen appears. Then a progress bar shows the remaining time until
the oven is cooled down and powers off or if “Cleaning” was chosen until the oven is ready for
cleaning.

You can open the door and the air continues to work to speed up the process. Be careful of hot
surfaces.
Please note if the power was interrupted and is restored and the baking chamber is still hot the
oven will automatically show this screen, start the fan and cool down to 100 degrees. Then turn
off automatically.
Do not disconnect the oven from the main power while the screen is on, it can cause component
damage from the heat.
You can turn on the oven again any time by pressing the NUM pad Power button
for one second.

7.9 +1 Function
The oven has an optional “+1” function that can be activated in user settings. This function allows
a dynamic scaling of baking programs to different food quantities.
Generally, altering the food quantity has a big influence on the baking result and should be
avoided. Highest quality can only be achieved if one item (for example one sandwich) is baked at
a time. If it is necessary to bake two sandwiches at a time, the browning settings of the
temperature and air speed will be very similar to the settings of one sandwich, since the hot air is
always stable over the whole baking area. But the if microwave energy to heat the center of the
sandwich has to heat two sandwiched instead of one, more energy will be required, so the
intensity has to be increased an probably the time has to be longer. So for best results it is
necessary to have a separate program for one sandwich and for two sandwiches for example.
This scaling can also be done with the +1 function.
Therefore activate the function in user settings. You can choose the percentage of the time of the
baking program that should be extended. For example if the program is 1:40 long, it will be
extended 20% to 2:00. You can choose temperature, microwave intensity and air speed during
this extension step and thereby address that more microwave than heat is usually required during
this step.

When running a program the oven behaves as normal, but you will now see the “+1” button on
the baking screen.

If you do not do anything the program will run as normally programmed, for example for one
sandwich.

If you inserted two


sandwiches you press the
“+1” button at any point of

7.10 User settings


To enter User Settings, turn off the oven, then turn it on.

On Start screen press the button “User Settings”. Enter User PIN (default PIN is 000), then press
Enter.

 “Heating Settings” contains all settings regarding the temperature (see following page).
 “+1 Step” contains the menu for the +1 function (see 7.9).
 “Alarm Sound” lets you choose from different sound files.

 “Alarm Repeat Time” defines after how many seconds the Alarm is repeated if the door is not
opened after baking is finished. The alarm is repeated regularly until the door is opened.
 “Visual Alarm” enables a yellow-black flashing screen when the baking is finished as a visual
indicator.
 “Clean Every 500 bakings” sets a reminder to clean the vents.

 “Delete all Programs” deletes all programs and Favorites


 To delete a single program you can just delete its name on Program edit screen or set the
time of the first step to 0:00, then save.
 “Preheat Temp. T1” is the temperature the oven heats up to after starting
 “Secondary Temp. T2” is the alternative temperature to which you can change with the
T1/T2 toggle button
 “Preheat Time” is the delay of the “oven ready alarm sound” after heating up
 “Reheat Time” for the reheat indicator after baking
 “Enforce Preheat Time” will let you start baking programs only when the oven is heated up
and the Preheat Time or Reheat Time has passed.

Example: “Cleaning every 500 bakings”


 “Do it Later” will remind you again the next time when powering on the oven.
 “Completed” will reset the counter and remind you again 500 bakings later.
 When the oven is powered on and more than 500 bakings were completed the reminder
screen appears.
 Then you should check all the vents and remove the dust with a damp cloth. Especially keep
the air inlets of the cooling fans on the backside clean.
 Check the front side of the oven and the door is clean and remove any dirt from the area
where the door closes. If dirt builds up in this area so the door does not close correctly it
might cause unstable operation.
 The backside has a removable exhaust cover. Clean it regularly
 Check the oven clearances to all sides to allow proper cooling.
 Of cause also check that the inside of the baking chamber is kept clean on a daily basis.

7.11 USB program transfer


To copy programs from/to an external USB drive power off the oven, then power on.

On start screen you see the USB option, select it, then enter the user PIN.

Insert the USB drive with the program file on it. Then choose which way to copy. If you cannot
continue the USB drive is not recognized by the oven, you may plug again or try a different one.
When copying from oven to USB, the file on the USB will be replaced with the programs from the
oven. When copying from USB to oven all programs in the oven memory will be deleted and
replaced with the new programs from the USB drive.

7.12 Warning screens


Oven too warm
The oven has internal temperature sensors monitoring component temperatures.
If the internal temperature is too high a warning screen will appear. In this case wait for the oven
to cool down and take measures to ensure proper ventilation.
 Check that all cooling vents are free and clean. Check that there is enough clearance to
the backside, the sides and the top to allow proper ventilation.
 Do not stack utensils or other appliances on top of the oven.
 Do not operate other heating appliances close to the oven.
 Check that the cooling fans on the backside are working and suck air when the oven is
on. If not, contact your service partner.
If the temperature increases further the oven will stop operation (Oven too Hot - Screen) until it
has cooled down.

Baking chamber overheated


The oven has a safety temperature limiter to limit the maximum temperature of the baking
chamber in case of malfunction. It can also trip from vibration or cold temperature.
If this warring screen appears wait for the oven to cool down, then press the red reset button
under the roof. It has to be pressed hard because it is spring loaded. The screen will disappear as
soon as the reset was successful.

If the safety temperature limiter trips repeatedly


there might be something wrong with a
component. Do not operate the oven any more to
avoid further damage and contact your service
partner.

Microwave Overheating
The microwave overheating warning can appear after a baking process if the becomes too hot. In
this case the microwave will reduce its power temporarily to avoid further overheating or
hardware damage.
The microwave does not overheat easily. Reasons for overheating can be if the microwave is
used with empty baking chamber or if the microwave cooling fan is blocked.
You can check with a slip of paper if sufficient air is sucked into all vents on the backside. If a fan
is not working or the warning appears repeatedly, please contact your service partner.

Repeated warning
If any of the major problems “Oven too Hot”, “Microwave Overheating” or “Baking Chamber
Overheated” occurred 5 times, the repeated warning screen will appear and the oven cannot be
anymore, because there might be a serious problem with the oven and continuing to use it might
cause further harm to components. Therefore, a qualified service technician should check the
unit.

Regular maintenance suggested


After a default of 500 hours of magnetron operation the oven reminds you that a
regular check-up is suggested to make sure the oven is in geed condition. You
can cancel the message any time and continue working normally. This screen is
just a Reminder and does not influence the operation of the oven. The reminding
interval can be set by your service partner.

Input signal error


This warning screen indicates a communication error of the control circuit, the Temperature
sensor or a loose connection. Interrupt the main power of the unit and power it up again. If this
happens repeatedly contact your service partner.

8. Troubleshooting

8.1 Safety temperature limiter


The Atollspeed oven is equipped with a safety temperature limiter.
Safety temperature limiter (STL) controls the temperature in the baking chamber and switches off
the whole baking oven when the temperature is inadmissibly high, for example in case of
thermostat failure, in order to avoid possible damages caused by overheating. The safety
temperature limiter can likewise be released by high vibration during transport or freezing. If the
oven is not working when you switch on press the STLs on the backside from the oven.
Under normal operating conditions, these STLs disengage only in the event of a technical failure.
In order to determine whether the safety temperature limiter is unlocked, push the unlocking
buttons on the STLs before putting your ATOLL baking oven into operation. If the STL
disengages several times, please contact your authorised agent for a check-up.

8.2 Oven does not start

8.3 Oven does not heat up

9. Cleaning

The oven should be cleaned every day inside and outside. Outside cleaning: Never use steel
wool or sandy cleaning material to clean the outside surface. Use a wet towel (not too moist) or
recommended stainless steel cleaner.

 Switch off the oven and keep the door closed. The oven fans will cool down the oven
automatically.
 Before starting to clean the oven wait at least 30 minutes to cool down.
 Be careful and make sure it is not hot any more before reaching into the oven. Otherwise wait
longer.
 Please take out the stone together with the fixture made of stainless steel.
 For safety pull the plug before cleaning the oven.
 Don’t use a water jet for cleaning, because it will damage parts of the machine and
cause leak of electricity.

 Use a moist towel for cleaning the machine. If the oven is seriously contaminated a liquid
detergent can also be used. After the application of liquid detergent, the baking chamber
always has to be rinsed with pure water.
 We recommend using a liquid detergent, which is certified for food industrial use and has
capabilities of removing lipids, proteins and organic substances.
 It is not allowed to use a high-pressure cleaner.
 If using compressed air for cleaning, be aware of the spreading flour dust. Wear a filter mask
and clean up the dust afterwards.

Cleaning the Air Filter

On the bottom of the oven there is a mesh filter.


It can be removed sliding it out towards the front.
Rinse the filter in water. If the filter gets damaged
or cannot be cleaned it has to be replaced.
Filter cleaning has to be performed weekly. Do
not use the oven without the filter.

Cleaning the Baking Chamber


Important: Do not spray any detergent or water into the upper area of the baking
chamber, it can cause short-circuit. Only use a damp cloth to clean the top of the
baking chamber.
To clean the chamber, use a brush, sponge and wet cloth to remove dirt. Especially clean the
edges of the chamber.
The door seal must be cleaned with a wet piece of cloth and a non-aggressive, liquid detergent. If
damaged, the seal can be replaced by a qualified service technician.
The stone holder can also be cleaned in a dish cleaner.
The oven should be cleaned regularly and any food deposits removed.
Failure to maintain the oven in a clean condition could lead to deterioration of the surface that
could adversely affect the life of the appliance and possibly result in a hazardous situation.

10. Product Warranty

There is a 12-month warranty on spare parts.


 Broken touchscreen glass is not covered by the warranty
 Accessories, utensils and consumables are not covered by the warranty
The Warranty is no longer valid in:
 The event of any machine modification undertaken without our supervision and consent.
 The case of an accident, abuse or misuse.
 When using spare parts which are not recommended by Kolb Huizhou Ltd.

Only a Kolb Huizhou Ltd. skilled service representative is allowed to carry out
such adjustments. Defiance can lead to control failure and consequently to
the expiration of any guarantee claims.

If any mistakes slipped in while editing this manual, Kolb Huizhou Ltd. does not need to take any
responsibility.
