INTRODUCTION
One of my favorite dishes-da shows once again the great diversity and miscegenation of
our nation. As we know our cuisine is characterized by the fusion of cultures that contribute in
some way to the exquisite dishes that characterize us. By this I mean that the Peruvian culinary
talent seems to be characterized by the listening of our chefs to foreigners who contribute to our
culture.
INTRODUCCION
Uno de mis platos favoritos- da muestra una vez más de la gran diversidad y el mestizaje de nuestra
nación. Como sabemos nuestra cocina se caracteriza por la fusión de culturas que contribuyen de
alguna y otra forma a los platos exquisitos que nos caracterizan. Con esto quiero decir que el
talento culinario peruano parece caracterizarse por la escucha de nuestros cocineros a extranjeros
que aportan a nuestra cultura.

CHAPTER I
1 ORIGIN.
The origin of chili peppers seems to date back to colonial times in Peru. Researchers like Javier
Masías, have found that chili pepper and white manjar are very close. Although this is very curious, it is
important to know that both dishes have the same origin: meniar blans, a dish that appears in Catalan cuisine
in the 14th century, in the Llibre de Sent Saxi recipe book, one of the oldest in Europe.
It is said that in the past this dish was presented with a cream that had chicken breast, rice, almonds
and that was characterized by its slightly sweet flavor due to the addition of sugar. When arriving to Peru,
it is that this traditional dish takes another course.
Chicken chilias we call it-still carries breast and nuts and, instead of carrying almonds, we opted
for a more easily accessible product such as pecans. Finally, we give a touch of Peruvianism, incorporating
yellow pepper. This is why the ají de gallina is losing the sweetness that previously characterized it and
begins to become a succulent dish.

CAPITULO I
1. ORIGEN.
Se cuenta que antiguamente este plato se presentaba con una crema que llevaba pechuga
de gallina, arroz, almendras y que se caracterizaba por su sabor ligeramente dulce debido a que se
le agregaba azúcar. Al llegar al Perú, es que este plato tradicional toma otro rumbo.
El ají de gallina como nosotros lo llamamos- sigue llevando pechuga y nueces y, en vez de
llevar almendras, optamos por un producto de más fácil acceso como las pecanas. Por último, le
damos un toque de peruanismo, incorporando el ají amarillo. Es por esto que el ají de gallina va
perdiendo el dulzor que antes lo caracterizaba y empieza a convertirse en un plato suculento.

3 PREPARATION.
The preparation is done as follows, cook a skinless chicken breasts in two cups of water with
a pinch of salt. And once they are cooked, the stock is reserved and the breasts are removed. (In
case you want to make chicken, the cooking time varies, depending on the amount and type of
chicken). He then suggests that the chicken fray in long stretched lint. As for the ají, it is advisable
to use ají amarillo or ají mirasol fresca liquefied. Then chop two onions into small cubes.
Immediately put oil in the pan and toss the chopped onion over low heat for 10 minutes. Add, a
teaspoon of garlic ground for two more minutes. Then, a cup of yellow hot pepper or mirasol
liquefied for 10 minutes.
To move forward with the preparation, recommend putting some chicken broth in the blender,
add slices of bread and liquefy. Return, then, to the mixture and add a handful of pecans or ground
nuts. Then add the liquefied bread to the mixture while we beat.
Finally, we incorporate the frayed chicken, moving two minutes while it thickens. Add a good
jet of milk exaporaday and a handful of grated Parmesan cheese, mixing. Check the touch of salt,
add a bit of white pepper and ready.
To serve: It is accompanied by a portion of white rice, sliced potatoes, half a hard-boiled egg,
olives and a few sprigs of parsley.

3. PREPARACION.
La preparación se realiza de la siguiente manera, cocer una pechuga de pollo sin piel en dos
tazas de agua con una pizca de sal. Y una vez que ya están cocidas se reserva el caldo y se retiran
las pechugas. (En caso se quiera hacer con gallina, varía el tiempo de cocción, según la cantidad y
tipo de gallina). Luego sugiere que se deshilache el pollo en hilachas de forma alargada.
En tanto al ají, aconseja utilizar ají amarillo o ají mirasol fresco licuado. Después, picar dos
cebollas en dados pequeños. Inmediatamente poner aceite en la sartén y echar la cebolla picada a
fuego suave durante 10 minutos. Añadir, una cucharadita de ajo molido durante dos minutos más.
Para avanzar con la preparación, recomienda poner un poco de caldo de pollo en la licuadora,
añadir rodajas de pan y licuar. Volver, después, a la mezcla y añadir un puñado de pecanas o
nueces molidas. Para luego añadir a la mezcla el pan licuado mientras batimos.
Para servir: Se acompaña de una porción de arroz blanco, papas en rodajas, la mitad de un
huevo duro, aceitunas y unas ramitas de perejil.

5. NUTRITIONAL CONTRIBUTION.
Lic. Sara Abu Sabbah comments that a chicken dish has approximately 200 grams and
contributes 744 calories of which 23% are proteins (44 grams), 13% are carbohydrates (25.5
grams) and 64% are fat (53.2 grams). That is to say, in this dish, the greatest amount of calories
(while there is no garnish) are fat from the cooking oil, pecans, milk fat, parmesan and the chicken
pulp itself.
If we add the calories of the garnish for example potatoes and / or rice, we can reach 1002
calories of a whole parboiled potato or 1172 calories of half parboiled potato and 1 cup of cooked
rice. With this last option we would have more than half of the calories needed for the whole day,
without putting the edible adornments such as eggs and olives.
Other nutrients that must be highlighted of chili are the contribution of vitamin A with 990
IU (international units), sodium with 1369 milligrams (you need up to 02 grams daily) and calcium
with 680 milligrams (the latter is needed on average 800 milligrams daily)
5. APORTE NUTRIONAL.
La Licenciada Sara Abu Sabbah comenta que un plato de gallina tiene aproximadamente
200 gramos y aporta 744 calorías de las cuales 23% son de las proteínas (44gramos), 13% son de
los carbohidratos (25.5 gramos) y 64% es de grasa (53.2 gramos). Es decir en este plato la mayor
cantidad de calorías (mientras no hay guarnición) son de grasa del aceite de la cocción, pecanas,
grasa de la leche, del parmesano y de la propia pulpa de gallina.
Si sumamos las calorías de la guarnición por ejemplo papa y/o arroz, podemos alcanzar las
1002 calorías de una papa entera sancochada o 1172 calorías de media papa sancochada y 1 taza
de arroz cocida. Con esta última opción ya tendríamos más de la mitad de las calorías necesarias
para todo el día, eso sin ponerle los adornos comestibles como huevo y aceituna.

Otros nutrientes que hay que destacar del ají de gallina son el aporte de vitamina A con 990
UI (unidades internacionales), sodio con 1369 miligramos (se necesita de hasta 02 gramos diarios)
y calcio con 680 miligramos (de este último se necesita en promedio de 800 miligramos diarios).
6. BENEFITS IN LASALUD.
The chili pepper is a healthy, nutritious and energetic dish is more suitable for children,
pregnant women, people who have a significant energy expenditure, older adults. If we are not in
this group and we love chili, we can opt for a low-calorie version: skim milk, less garnish.

El ají de gallina es un plato saludable, nutritivo y energético es más adecuado para niños,
gestantes, personas que tienen un gasto de energía importante, adultos mayores. Si no estamos
dentro de este grupo y nos encanta el ají de gallina, podemos optar por una versión baja de calorías:
leche descremada, menos guarnición.

CONCLUSION
The ají de gallina is a Peruvian flag dish. It seems that what makes it so special is its
history, enriched by culture. The extraordinary thing about Peruvian food is that when you are
sitting in front of a plate, like chili pepper, you can begin to imagine its origins, since all dishes
tell a particular story, unique and unrepeatable.
CONCLUSIÓN
El ají de gallina es un plato bandera Perú. Parece ser que lo que lo hace tan especial es su
historia, enriquecida de cultura. Lo extraordinario de la comida peruana es que cuando uno está
sentado frente a un plato, como el ají de gallina, uno puede empezar a imaginar sobre sus orígenes,
pues todos los platos cuentan una historia particular, única e irrepetible.
