INGREDIENTS
 2 bundles (180g/4oz) Soba (buckwheat noodles)
 4 Tbs soy sauce
 2 Tbs rice vinegar
 2 Tbs agave nectar
 1 Tbs sesame oil
 1 Tbs sesame seeds
 1 clove garlic
 3 oz curly kale, stripped and ripped with hands
 1 red chili or 2 oz red bell pepper, seeded and julienned
For Fried Tofu
 Cut extra firm tofu into ½-inch cubes and fry over high heat with enough oil for 10 to 12 minutes.
Drain oil completely and set aside.

INSTRUCTIONS
1. Cook soba by following directions of package you are using.

2. Meanwhile soba is cooking, combine soy sauce, vinegar, nectar, sesame oil, and sesame seeds in
a large mixing bowl. Grate garlic as well into mixing bowl using a cheese grater. Whisk until
everything is well combined, set a side.

3. Drain soba and rinse under running cold water to get rid of extra starch and cool. Drain
completely and add into mixing bowl with dressing along with ripped kale and red chili.

4. Toss everything with your hand and transfer to a serving plate and top with fried tofu if you are
using and more sesame seeds. Enjoy!

INGREDIENTS
 ½ block (6 oz/170g) of firm/extra firm tofu, warp in paper towel for 5 min to get rid of excess water
then cut into ½"x1/2" cubes (If you are using only tofu, use whole 14oz/396g block)

 2 Tbs 15ml soy sauce


 2 Tbs 45ml agave nectar, honey or sugar
 1 Tbs / 15ml sesame oil
 1 tsp / 5g sesame seeds
 3 cloves garlic, minced (approximately 1Tbs)
 2 Tbs / 29ml cooking oil
 3 cups (8 oz/226g) Beech, oyster or any other mushrooms
 2 green onions, chopped
 chive sprouts for garnish, optional

INSTRUCTIONS
1. Heat a large skillet over medium hight heat; add oil and swirl to coat. Add tofu cubes carefully
and spread out evenly. Toss or stir around every 2 to 3 minutes so they will brown up evenly. It
will take about 7 to 8 minutes total. If it takes too long, increase heat to high.

2. Meanwhile, in a small mixing bowl, combine soy sauce and next 4 ingredients(until minced
garlic), set aside.

3. When tofu browned up all sides, add mushrooms and combine with tofu. Cook for 3 minutes,
but don't stir too much- so mushrooms will turn nicely golden brown.

4. Stir in sauce we made earlier, cook for a minutes. Moisture should evaporates quick. Remove
from heat, and stir in green onion.
5. Serve with warm cooked rice and sprinkle with some sesame seeds and green onion right on top
or chive sprouts if you have any. Enjoy!

NOTES
Tofu and mushrooms needs a bit more patient to be golden brown, so let them do their magic in the
skillet!

Serves: 4 to 6

INGREDIENTS
 7 dried shiitake mushrooms
 2 cups water
 2 cups medium or short grain rice
 10 oz soybean sprouts, washed, removed brown bits and drained
 ½ cup soy sauce
 ½ cup mirin
 ½ cup water
 3 garlic cloves, finely chopped
 5 green onions, chopped
 2 red chili, finely chopped (you can substitute to 1 Tbs gochugaru or omit)
 1 Tbs sesame oil
 1 Tbs sesame seeds

INSTRUCTIONS
1. In a sauce pan, add dried shiitake and water; bring it to boil and reduce heat to
medium, simmer for 5 minutes. Let it cool completely then take mushrooms out and
squeeze all of moister from mushrooms. Pour broth into a measuring cup through a
strainer. Check how much broth you have, and add cold water to make 2 cups. Set
aside.

2. In a thick bottom pot, add rice; wet rice with enough cold water and drain. Rubbing rice
with your hand and you will see water turns into white milky color. Rinse off milky water
and drain. Repeat this process 4 to 5 times or until it doesn’t cloudy or milky anymore.
At last rinse, drain water as much as possible.

3. Place clean soybean sprouts right on top of rice, completely cover rice. Pour measured
mushroom broth. Cover and bring it to boil over high heat, reduce heat to medium low,
simmer for 20 minutes for short grain rice(sushi rice) and 15 minutes for medium grain
rice. You can also cook this recipe in a rice cooker with a same setting as cooking
regular white rice. *Do not open lid to check if it’s boil, just carefully listen the sound of
boiling.
4. Remove from heat and let it rest for 10 minutes. Don’t open lid right now, so rice will
observe steam and finish cooking.
Meanwhile, let’s make sauce to serve with. Chop shiitake mushrooms that we made
broth; add into a sauce pan. Pour soy sauce, mirin and water. Stir and bring it to boil;
reduce heat to medium and simmer for 5 minutes. When they are done cooking, add
garlic, green onion, chili, sesame oil and sesame seeds.
5. Mix rice and soybean sprouts bottom to top with a spoon. Serve with sauce on side, so
yourself and guest can control how much sauce add into soybean sports rice. Mix well
with a desire amount of sauce with soybean sprouts rice and enjoy!

Bahan:
kaki jamur 4 ons..
rendam dulu sampe mekar, kemudian rebus sebentar, lalu cuci sampe bersih..peras kering, blender kasar.. 8 butir
telur
8 ons sagu tani
12 sdm tpg susu
(boleh pk susu kedelai)
8 sdm tpg beras
bumbu dapur
(garam, gula, micin jamur,
lada)
6 sdt ketumbar

Cara..
campurkan kaki jamur yg sudah diblender dengan telur dan bumbu dapur, aduk rata..lalu masukkan tepung susu,
tepung beras ..aduk rataa
kemudian tambahkan tepung sagu tani sedikit2...klo adonan keras.. tambahkan air secukupnya
coba rebus dulu 1 buah, klo
kurang rasa dan msh keras,
boleh tambahkan bumbu dapur dan air secukupnya...
Lalu dibentuk, boleh juga isi dengan telur rebus baksonya.. rebus sampe matang± 15-20 menit....

Kuahnya:
Tumis kemiri halus,daun jeruk,serai geprek,lengkuas geprek sampe wangi..
Ksh air sisa rebusa bakso td dan tambh lg air seckpnya utk kuah
Ksh pala,bbq,grm,mkc,gula,lada
Cicipin rasa uda pas dan kuah uda wangi.angkat...
Saran penyajian:
Siapkan mangkuk,ksh mie/bihun,caisim & tauge rebus,bakso..siram dgn kuah panas
Tambhkan seledri,kol grg,sambel cabe, perasan keruk kunci,kecap manis dan saos tomat(jika suka)..
