To Our Valued Supplier,

MacroAsia Catering Services, Inc. is fully implementing a food safety management system to ensure that food
borne illnesses and hazards are eliminated in our processes and production. A successful food safety
management system begins with an assurance that our accredited suppliers of food raw materials comply with
food safety requirements as well as regulatory compliance in promoting food safety.

In view of this, a Supplier Quality Assurance (SQA) Program has been established and has been effective since
its implementation in managing the risks and hazards in food. The willingness of our suppliers to undergo this
program and further improve their systems are remarkable, such that over the years we have consistently
achieved our objective of providing safe, quality foods and services to our customers and ultimately to the
consumers of our food products.

We are again implementing our Supplier Quality Audit Plan which includes your facility for an on-site audit and
inspection. Below are the areas of inspection to be checked and verified by our company which will be led by
the Quality & Food Safety representative:

1. Personnel Health Hygiene and Training

b. Medical Screening
c. Personnel Hygiene Practices
2. Food Receiving and Storage
a. Food Receiving/Supplier Approval Program
b. Food Storage/Temperature Control of Chillers/Freezers
3. Food Production (including microbiological analysis of food, water and ice)
a. Process flow
b. GMP / HACCP Program
4. Equipment and Premises
a. Cleaning and Sanitation
b. Waste Disposal
c. Pest Control
d. Verification and Calibration of equipment
e. Facility layout and design
5. Food Product Recall and Traceability
6. Logistics/Transportation
7. Permits, Licenses and Certificates from Government Agency and Third Party Accreditations
8. Product Specifications of Items Supplied / To be Supplied

On-site records checking, personnel interviews and review of documents may be carried out during the audit
proper to support presence of the above processes in your facility. It is requested that actual preparation or
processing of products intended for MACS be observed during the on-site audit. We greatly appreciate your
cooperation in ensuring that all efforts are made to provide our airline and institutional clients with safe and
quality food products.
