CULINARY: MR.

SCHOEPP
Windsor Middle School’s culinary classes are part of a Career Technical Education (CTE)
program called Vineyard Academy Harvest. As such, in addition to learning basic cooking
skills, students will also be exposed to various careers within the hospitality, tourism and
recreation industries. This could include speakers and/or field trips to various partners in the
community.

Overview of Programs

6th grade: “Intro to Foods” one quarter

7th/8th grade: “Farm to Table” semester course

2020-21 school year- 8th grade: Advanced Culinary year-long course

Class Structure

Day 1 (Monday): Overview of current week’s focus and recipe sheet

Day 2 (Tues/Wed): Prep Day and techniques

Day 3 (Thurs/Fri): Cooking / Tasting

Overview of Lessons

In this course, students will become experts in cleanliness, sanitary work conditions, food

safety, nutrition, measurements, food awareness, following recipes, and careers related to the

hospitality industry.

Class Communication

Culinary events, assignments and paperwork will be found at ​mrslands.weebly.com​ and will

be updated as often as possible.


Class Expectations

For a successful class experience, students are expected to be safe, attentive and aware of

their surroundings at all times. All student activity will be recorded Dean's List and parents can

check their child’s progress regularly.

On Dean’s List, students marked “culinary at risk”, who are unable to participate successfully

in class, will be dismissed from that week’s hands-on class activities and presented an

alternate activity on prep/cooking days. Students marked “culinary unsafe” on Dean’s List will

be given a class suspension that week. If the problem persists, parents will be contacted and

the student will be asked to exit the class.

Community Interactions

Community members are encouraged to participate in this course! If you have a skill or a

business that you would like to offer the class, whether it be a demonstration, guest speaker,

or a field trip to your business, please complete “Back to School: Culinary Questionnaire”.
