STANDARD RECIPE (yield:6)


1 Baguette cut in ½ inch slices
2cups tomatoes finely chopped
2cloves garlic minced
½ medium onion finely chopped
6leaves basil finely chopped
½ cup fresh parmesan cheese (grated for topping)
¼ tsp salt to taste
½ tsp pepper to taste
3tbsp olive oil
INSTRUCTION

1. Turn your oven to the broil setting. Place baguette slices on a large baking sheet. If preferred
you could brush the slices with a bit of olive oil on both sides and season with a bit of salt and
pepper. Toast both sides for 1-2 minutes and set aside.
2. In a medium size bowl, toss together the tomatoes, garlic, onion, basil, salt and pepper and olive
oil. Taste for seasoning and adjust with salt and pepper when needed.
3. Spoon bruschetta on the toasted bread slices and top with grated parmesan cheese.
