 Meats such as Pork and Beef were ground daily with specific ingredients to make meatballs and
sausage from scratch. Cleaning and preparing Chicken, Fish and seafood. Dry aged and cured Beef
and Pork for steaks and bacon. Other responsibilities included making fresh, from scratch cheese, pasta,
breads, pasta sauce’s, and salad dressings; as well as basic prep of vegetables.

 Line Duties: Full responsibility of the line, including; sauté, grill, fry and pizza oven.

 Responsibilities: Brewing cider, bottling product, maintaining a sterile environment at all times,
driving deliveries, working bar at various events.

 This job was very challenging. Attention to detail and a sterile, food safe environment was required at
