 The US Department of Health and Community Services is
a cabinet in the United States government that aims to protect
essential public health.
Its motto is "improving America's health, safety and well-being".
The United States Department of Health and Community
Services was formed by President Jimmy Carter. Previously, this
department was named the Ministry of Health, Education and
Welfare. During this time, the education function was transferred
to the new Ministry of Education who heads the Social Security
Administration, the institutions that make up the Administration of
Public Health Services and Family Support.

U.S.P.H. STANDARD
These are rules and regulations that define safe and
acceptable sanitation and hygiene practices and procedures for
the purpose of maintaining public health.

Sanitation
This is healthy creation and maintenance. Or hygienic
conditions.
Standard
Acceptable norms or quality of service products.
US Public Health Standards
This course provides theoretical and practical training in the
cleaning and sanitation of assigned work stations, and the
personal and professional cleanliness of service personnel on
board and those working in the hotel and food industry in
accordance with USPH standards.

Standard U.S.P.H. which is applied to employees:

1. Personal Hygiene.
• Cleanliness
• Good posture
• Practice
• Adequate sleep
• A balanced diet
• Relaxation
• Eat balanced
• Drink enough water every day
• Take a shower every day and use a deodorant
• Brush teeth regularly
• Maintain clean hair
• Neat clothes
• Maintain nails maintained
• Clean the shoes
• Always wash hands
2. Three Bucket System
This is a procedure for washing, rinsing and cleaning where
different buckets and sponges or mops are used for each task.
In washing, for example a bucket with water and soap /
detergent is only used for this purpose and will not be used for
flushing or sanitizing. For flushing, another bucket with only water
will be used for this purpose. The third bucket of water and
sanitation solution must be used only for sanitation.
They are color-coded for the purpose of easy recognition
and minimize errors. For example, a red bucket can be assigned
to wash, white to rinse, and gray for sanitation. The liquid is often
replaced to maintain the consistency of the solution. Litmus paper
tests must also be carried out frequently on sanitizing solutions to
ensure their effectiveness. The three bucket system can be
expanded to include the use of three separate bodies each of
three tasks namely: Washing, Rinsing and Sanitary.

3. Standards applied in food and beverages

• Use gloves
• All foodstuffs are stored in a closed container and cooled
and kept away from detergents and chemicals.
• Clean and wash storage containers.
• Adjust and check the temperature of the refrigerator.
• Always wash your hands before touching food or drinks.
4. General Cleanliness
• All floors are swept and mopped with detergent and
rinsed with sanitizing solution
• Clean the drain.

Purpose and objectives

Apply USPH standards in bars, dining rooms, cabins,
public areas, kitchens. Conduct sanitary inspections, carry out a
three bucket system. Implement emergency measures in the
outbreak prevention plan (OPP). Recognize the importance of
complying with USPH standards.
