1 History of Italian baker

The Italian baker incorporated on 21st march 2007, fully owned subsidiary of FFM Bhd
introduced Massimo, a brand known for its high quality breads baked with Italian passion. FFM
Bhd is dominant player in Malaysia, wheat flour industry and largest flour miller in Malaysia.
By using high-quality flour from FFM and other quality ingredients to ensure the same
consistency and quality in every loaf, Massimo breads are baked under stringent quality
assurance to meet the demands of today’s consumers (www.massimo.com.my). With initial
investment of RM120 million to build single factory includes construction of the plant and
installation of bakery machinery where the machines were purchased from USA and Europe.
Later, they incurred an additional RM57 million for expansion in 2014 for new production line;
bread line and cake line. Now they have total of three production lines; bread line, roll line,
and cake line. The Italian bread making emphasize a lot on passion, process, art and skill and
most importantly fresh ingredients to obtain good quality of bread (www.massimo.com.my).

1.2 Plant layout

The plant was built on 8 acres land with total build top of around 2000 square meter which
equal to two football field. Basically it contains three main section including warehouse,
production areas and finish goods warehouse. It is surrounded by offices, quality assurance,
production, human resources and etc.

1.3 Brand name

The name Massimo is chosen for the branding with the tagline ‘Wholesome Goodness
Maximum Satisfaction’. The name Massimo is well renowned in the world of Italian fashion
which denotes luxury and prestige, synergising traditional style with the modern design.
Similarly, Massimo bread is in the class of its own superior quality bread bakes combining the
traditional Italian human baking passion with modern day technique to ensure that it is always
retain that genuine fresh from the oven taste (www.massimo.com.my).

1.4 Massimo’s Product

a) Massimo sandwich loaf with wheat germ (400 g and 600 g)

Massimo sandwich loaf is the first in its category among the local bread produced. It savour
the nutritional goodness and benefits of wheat germ. Wheat germ is rich with vitamins E,
omega-3 fatty acids, natural fibre, protein, B1, B2, B6, magnesium, phosphorus and zinc
benefits the heart and enhance immunity (www.massimo.com.my).

b) Massimo white sandwich loaf (400 g and 600 g)

Massimo white sandwich loaf which is popular among Malaysian. Perfect for breakfast and

c) Massimo whole wheat (420 g)

In order to truly benefits from the total goodness of wholemeal, they have wholemeal loaf that
are available in the market. Baked purely from whole wheat flour and contain all the natural
goodness of whole wheat grain. They really ensure nothing is lost during both the wheat-
milling and bread baking processes and retain the total goodness of whole wheat nutrients in

d) Massimo fine wholemeal (420)

New launched product taste like one white bread bakery. Baked with 100 % high protein whole
wheat flour with each slice comes packed with the nutritional goodness of fibre, essential
nutrients and minerals found in the whole grains which are finely milled for that soft and fluffy

e) Massimo cream role series

The perfect snack for on the go, filled with delicious cream filling which make it perfect combo
with our favourite drinks during tea-time. There are two types of cream rolls which are Duetto
cream rolls which consists of blueberry-vanilla, coffee-vanila and strawberry-vanilla while
Favorito offers a choice of chocolate cream, corn cream and vanilla cream filling

f) Chiffon in a cup

Massimo Chiffon In A Cup are made with simple, basic ingredients such as eggs, flour and
milk. Available in Classic, Mocha, Pandan Coconut and Cheese flavour, this delectable chiffon
cake is soft and fluffy in texture, nutritious and so delicious (www.massimo.com.my).

1.5 Certifications

a) Halal certificates

FFM Berhad has assembled a multidisciplinary Halal team to plan, implement and monitor the
Halal system in its FFM Bakery. Collectively the team is responsible to ensure every operation
under their control complies with the Halal system of the company. The Halal team is
responsible to ensure the product produced comply with Halal standard based on Shariah Law.
The appointed team members will have the following responsibility and authority

i) Active involvement in the development of the Halal system.
ii) Ensure the Halal system is being implemented and maintain accordingly.
iii) Identify, record and suggest solution to any problems with regard to product,
process and Halal system for continual improvements.
iv) Organize training needs in related to Halal for all employees
