Potassium sorbate is a salt of sorbic acid that is usually seen as a cream coloured granule or
powder. It is produced by neutralising sorbic acid with potassium hydroxide. You can find
potassium sorbate in a wide range of food, beverage and pharmaceutical industries and
products (usually as a preservative).

Within the Food & Beverage Industry, potassium sorbate is used to inhibit yeasts and mould. It is
a common preservative in industries ranging from baking and cheese production to wine, cider,
yoghurt and fruit preservation. However, when used in alcohols (such as wine), potassium
sorbate converts into sorbic acid due to the yeasts used to ferment the product. This process
inhibits the growth of the yeast further, preventing further alcoholic sugars forming. The side
effect is that the product ends up more stable when stored.

potassium sorbate as one of their primary preserving agent. This helps extend their shelf life
