CAA120 Culinary Fundamentals

 IHOP provides onion rings, mozzarella sticks and chicken strips and french fries that are
deep fried. The cut of meat used in the chicken strips is white meat which is a good
choice for deep frying.
 The Country Fried Steak is made using the pan frying technique. The type of meat
typically used for this dish is a tough meat, such as beef bottom round, that has been
tenderized.
 French Onion Pot Roast is made by braising. A beef chuck roast and onions are braised.

 Fried calamari, they are flash-fried which is a form of deep frying because you submerge
the food item in oil.
 Their mushroom and cheese flatbread appetizer use braised mushrooms. They combine
several items with wine before adding mushrooms and then cook them covered.

 Traditional Oyster Stew uses stewing method, they use oysters as their choice of meat
along with celery, and onions which are typical stewing items.

 The Duck Curry is made through the braising method. It is roasted then simmered
covered overnight.

 Crispy Whole Flounder is pan-fried Flounder. Fish is typically pan fried.


 Soft Shell Crab is deep fried. Soft shell crab is a good choice for deep frying because
you can eat it whole.
