BAKING POWDER | PRODUCT INFORAMTION

Baking Powder is a common leavening agent used in a range of bakery products. It is usually
manufactured by blending an acid, a base along with a buffer to prevent premature reactions. It is sold as
a white to off-white powder and is used in baking to add volume and lighten the texture of baked goods
through the addition of Carbon Dioxide to the mixture.

Commonly it is used as a replacement for yeast in traditionally baked goods, where the taste from the
yeast fermentation is not desirable. This taste improvement along with the reduced time and manpower
required in the baking and resting stages – making it a core product in mass baking and amongst an
increasingly large number of other bakers as well.

Baking Powder is commonly manufactured from a combination of Sodium Bicarbonate, Mono Calcium
Phosphate alongside either Cream of Tartar, Sodium Acid Pyrophosphate (SAPP) or Tartaric Acid for the
reactive side. Starches (most commonly Corn Starch) are used as a buffering aid, moisture absorbent and
flow aid to help maintain product stability over its shelf life.

As baking powder brands have a range of potential ingredients and formulations, they can vary in
strength, reaction times and many more. As such it is worth testing and comparing a range of brands to
see volume requirements and final products to see if they are suitable. Cheaper pricing may not always
equal value for money.
