Name of the test: ACROLEIN TEST

Principle: Acrolein is the simplest unsaturated aldehyde caused by dehydration of glycerol it removes 2 H20. This contain
glycerol group, the reason why fats are positive. The Acrolein test is based on dehydration reaction. It removes the
water molecules from the glycerol by adding potassium hydrogen sulphate reagent. The reaction between the glycerol
and potassium hydrogen sulphate results in the formation of "Acrolein" This identify by the release of pungent smell.

a. Procedure :

DESCRIPTION:

Place 0.5g of potassium bisulfate (KHSO4), a


dehydrating agent of glycerol. When lipids
are heated in the presence of potassium
bisulfate (KHSO4), a characteristic burned
fat odor of acrolein is produced. Add a drop
of coconut oil, this serves as lipid or fat that
will be mixed in KHSO4.

b. Results and Interpretation


INTERPRETATION:

Acrolein has a pungent irritating odor. When


fat is strongly mixed with dehydrating agent
such as potassium bisulphate (KHSO4), the
glycerol portion of the molecule is
dehydrated to form an unsaturated
aldehyde, and will produce pungent odor.

Name of the test: Emulsification of Fats

Principle: Emulsification is the process which stabilizes the water and oil emulsion, by the help of
emulsifying agents. The lipid or oil in water appears on the top of the water because of the high surface
tension of water which gets together to form a separate layer.

a. Procedure :

A drop of cooking oil in 1mL distilled water.


Add one drop of 0.5% of Na3Co3 and one
drop of cooking oil. On the other test tube
add a drop of rancid oil in 1mL distilled
water and one drop of 0.5% of Na3Co3 and
rancid oil in the other test tube. Na3Co3
serves as the emulsifying agent, Sodium
carbonate is soluble in water and rancid oil
and cooking oil serves as the lipid and fats.

B. Results and Interpretation


INTERPRETATION:

When rancid and cooking oil are mixed with


1mL distilled water, the oil in water
emulsion will form at the top, due to the
high surface tension of water. When the
rancid and cooking oil are mixed with
NaCo3, it gives permanent or stable
emulsion of lipid and water.
