Abstract
Purpose of community service activities is to improve the knowledge of public regarding biotechnology
in Hamlet Cau, Tua Village Marga District Tabanan Regency of cassava waste to be made nata. Nata
were analyzed descriptively. Organoleptic test results by mothers PKK Dasawisma in Cau Hamlet Tua
Village Marga District Tabanan Regency show as musch 95% nata aroma is acidic, while 5% stated
flovorful enough acid. A level of aroma nata de cassava, 15% stated who do not like it, 40% who stated
less like, 40% expressed likes and 5% said very fond. About color nata, 25% said yellowish color and
75% stated cloudy white color. A color nata, as much as 5% respectively were expressed not like and
very fond, as musch as 40% said less like and 45% said like and 5% were not expressed opinion. Texture
of nata, as much as 60% stated quite chewy and as many as 40% said chewy. A degree of texture nata,
as many as 70% said like and 30% stated very fond.
