Vegetable Briouat

Ingredients Preparation
6 sheets of filo pastry Finely chop all vegetables (except the peas)
1 finely chopped onion Preheat oven to 180C/350F/Gas 4.
5 cloves of garlic Heat the oil in a pan.
½ teaspoon ginger Cook the vegetables for about 10 mins until
1 teaspoon fresh finely chopped parsley softened.
and coriander Stir in the spices and season.
1 pinch cumin
½ teaspoon paprika To create pastry packets:
salt and pepper Cut the pastry sheets into three lengthways and
½ teaspoon ginger then each strip in half crossways.
1 carrot Place a heaped teaspoon of vegetables in the
1 potato, bottom corner of the strip.
½ aubergine Fold over to make a triangle and then continue
½ red bell pepper folding so you end up with what looks like a little
cup of green beans samosa.
cup of peas Seal the packet with a little beaten egg
olive oil Brush with oil and put on a baking sheet.
1 egg, beaten Bake for about 15 minutes until golden.
