looking at possibilities
beyond the space tourism
company’s immediate goal
of launching passengers
on suborbital flights as
early as next year.
The companies an-
nounced the investment
Tuesday, saying they will
work together on broad-
ening commercial access
to space and transforming
global travel technologies.
The sum is a fraction of
the $1 billion Virgin Galac-
tic says it has invested in
its program, but Boeing
called it a strategic invest-
ment rather than about a
specific craft that would

to-point transportation
around the world.

WASHINGTON — The U.S.
Constitution gives the House “the
sole power of impeachment” — but
it confers that authority without an
instruction manual.
Now comes the battle royal over
exactly what it means.
In vowing to halt all cooperation
with House Democrats’ impeach-
ment inquiry, the White House on
Tuesday labeled the investigation
“illegitimate” based on its own
reading of the Constitution’s vague
language.
In an eight-page letter, White
House counsel Pat Cipollone point-
ed to House Speaker Nancy Pe-
losi’s failure to call for an official
vote to proceed with the inquiry
as grounds to claim the process a
farce.
“You have designed and imple-
mented your inquiry in a manner
that violates fundamental fairness
and constitutionally mandated due
process,” Cipollone wrote.
But Douglas Letter, a lawyer for
the House Judiciary Committee,
told a federal judge Tuesday that
it’s clear the House “sets its own
rules” on how the impeachment
process will play out.
The White House document
lacked much in the way of legal
arguments, seemingly citing cable
TV news appearances as often as
case law. And legal experts cast
doubt upon its effectiveness.
“I think the goal of this letter is
to further inflame the president’s
supporters and attempt to delegiti-
mize the process in the eyes of his
supporters,” said Stephen Vladeck,
a law professor at the University of
Texas.
Courts have been historically
hesitant to step in as referee for
congressional oversight and im-
peachment. In 1993, the Supreme
Court held that impeachment was
an issue for the Congress and not
the courts.
In that case, Walter Nixon, a
federal district judge who was re-
moved from office, sought to be
reinstated and argued that the full
Senate, instead of a committee that
was established to hear testimony
and collect evidence, should have
heard the evidence against him.
The court unanimously reject-
ed the challenge, finding impeach-
ment is a function of the legislature
that the court had no authority
over.
As for the current challenge to
impeachment, Vladeck said the
White House letter “does not strike
me as an effort to provide sober le-
gal analysis.”
Gregg Nunziata, a Philadelphia
attorney who previously served as
general counsel and policy adviser
to Republican Sen. Marco Rubio,
said the White House’s letter did
not appear to be written in a “tradi-
tional good-faith back and forth be-
tween the legislative and executive
branches.”
He called it a “direct assault on
the very legitimacy of Congress’
oversight power.”
“The Founders very deliberate-
ly chose to put the impeachment
power in a political branch rather

ed this to be a political process and
it is.”
G. Pearson Cross, a political sci-
ence professor at the University of
Louisiana at Lafayette, said the let-
ter appeared to act as nothing more
than an accelerant on a smoldering
fire.
“It’s a response that seems to
welcome a constitutional crisis
rather than defusing one or point-
ing toward some strategy that
would deescalate the situation,”
Cross said.

WINNFIELD, La. — Tucked
away in the dense forest of ru-
ral Louisiana is a barbed wire-
ringed prison that has quickly
grown into a major detention
center for immigrants detained
at the border.
The Winn Correctional Cen-
ter is one of eight Louisiana jails
that have started housing asylum
seekers and other migrants over
the past year, making Louisiana
an unlikely epicenter for immi-
grant detention under President
Donald Trump. U.S. Immigration
and Customs Enforcement says
it’s now holding about 8,000 mi-
grants in Louisiana out of 51,000
nationally.
These new facilities, a mix of
old state prisons and local jails,
are several hours away from
New Orleans and other major cit-
ies in the region, far from most
immigrant rights’ groups and
immigration lawyers. Migrants
complain of mistreatment and
prolonged detention.
“I knew they would detain us,
but I never thought it would be
for this long,” said Howard Anto-
nio Benavides Jr., an 18-year-old
from Venezuela who has been at
Winn for three months.
The surge in migrant deten-
tion has occurred against the
backdrop of a criminal justice
overhaul in Louisiana that has
reduced the state’s prison popu-
lation and threatened the econo-
mies of the small towns that rely
on the jails.
ICE has stepped into the void.
At Winn, which started detain-
ing migrants in May, employee
salaries have risen from $10 an
hour to $18.50. Local officials
have signed contracts that guar-
antee millions in payments to the
local government, the state, and
a private prison company based
in the state, while still allowing
ICE to detain migrants at a daily
cost well below its national aver-
age.
ICE refused several requests
to comment on why it focused on
Louisiana. In a statement, it said
it identifies “contracts that can
be modified to accommodate in-
creased agency needs.”

ey laundering.

the two lied to a feder-
al bank in an attempt to
get loans and tried to
defraud the tribal gov-
ernment with false travel
reimbursement claims.
It says they’re accused
of forging hotel bills and
receipts that they sub-
mitted to the tribal gov-
ernment for reimburse-
ment, later using the
funds to pay off personal
loans under Sheena Ed-
ward’s name.

the tribal government in
2017. Trial is set for next

as an additional author
of the bill on the Missis-
sippi Legislature’s web-
site, though she said she
wasn’t involved in drafting
the bill and that her name
wasn’t added until the bill
came to the Senate floor.
The bill’s author, Dist. 23
Sen. W. Briggs Hopson
III (R-Vicksburg), did not
return calls from The Dis-
patch by press time.
Context of the charge
Turner-Ford envi-
sioned the law coming
into play when someone
makes a threat against a
governmental body that
is serious enough for the
office to “react or change
the way it operates.” She
pointed out even in a case
where no one is physically
hurt, such threats cause
disruption to schools and
businesses and can harm
the victims, who may be
intimidated from coming
to school or work.
“It depends on your
definition of harm,” she
said.
Her sentiment was
echoed by District At-
torney Scott Colom, who
said it’s always appropri-
ate for law enforcement to
investigate threats.
“I think the climate
we’re in now with the
school shootings across
the country, we definitely
need to pay attention to
any student or any threats
that would put (students
and teachers) in danger,”
he said.

gations Lt. Tony Cooper
said while investigators
take each incident on a
“case by case basis” when
determining whether
to level this particular
charge, generally, the sus-
pect has to make a direct
threat against the organi-
zation.

not something that falls

Turner-Ford said she
feels law enforcement and
other authorities have
some discretion in ap-
plying the law, looking at
the circumstances of the
case before determining
whether to press felony
charges against some-
one who hasn’t physically
harmed anyone.
“They do have a cer-
tain amount of discretion,
but I think that has to be
balanced also with indi-
viduals believing they are
safe within the confines
of a school or a courtroom
or some other building
where they should feel
they’re protected,” she
said. “I think there’s a bal-
ance that has to be struck
between the two.”
Likewise, she and Co-
lom said, there are dif-
ferent factors that would
determine whether a juve-
nile’s case goes to youth
court or circuit court.
“Generally ... it has to
be an offense that carries
life for an adult, such as
murder (for the case to go
to circuit court),” Colom
said, adding the case also
goes to circuit court if the
juvenile used a weapon in
the commission of the of-
fense.

request a juvenile’s case
go straight to circuit
court under certain con-
ditions such as whether
the “offense constitutes a
substantial danger to the
public,” how serious it is
and the “sophistication,
maturity and educational
background of the child,”

ple from discrimination in employ-
ment, with one conservative justice
wondering if the court should take
heed of “massive social upheaval”
that could follow a ruling in their
favor.
With the court’s four liberal jus-
tices likely to side with workers who
were fired because of their sexual
orientation or transgender status,
the question in two highly anticipat-
ed cases that filled the courtroom
was whether one of the court’s con-
servatives might join them.

NEW YORK — The furor over a
tweet by the Houston Rockets gen-

fine line that U.S. companies must
walk when doing business with Chi-
na.
The NBA is trying to manage
that delicate relationship after
Daryl Morey posted a now-deleted
tweet of an image that read “Fight
for Freedom. Stand with Hong
Kong,” referring to the 4-month-
old protests in the semiautonomous
Chinese territory. That set off an
immediate backlash, with China’s
state broadcaster canceling plans
to show a pair of preseason games
in that country later this week.
With a population of 1.4 billion
people, a rapidly growing middle
class and easing economic restric-
tions, China is highly appealing to
U.S. companies looking for growth
overseas. But companies must bal-
ance the potential for growth with
the potential for pitfalls in dealing
with a country that aggressively
goes after its detractors.
Paul Argenti, professor of corpo-
rate communication at Dartmouth’s
Tuck School of Business, cautions
that companies should know what
they’re getting themselves into
when they enter a relationship with
a country that’s heading into 70
years of communist rule.
“It has a regime that doesn’t look
like the United States,” Argenti
said. “We can pretend it is a democ-
racy, but it’s not.”
Western governments dislike
China’s attacks on companies but
are unlikely to get involved, said
David Zweig, a politics specialist at
the Hong Kong University of Sci-
ence and Technology. So it’s up to
companies to navigate situations
themselves.
Most of the time that means
companies that face trouble quick-
ly acquiesce to Beijing, apologize
and try to “build bridges” instead
of standing up to China, said Jon-
athan Sullivan, director of China
programs at the University of Not-
tingham’s Asia Research Institute.
In 2018, Gap pulled a shirt with
a map of China that did not include
Taiwan, a self-ruled island that Bei-
jing regards as Chinese territory,
and apologized. Delta Air Lines,
hotel operator Marriott and fash-
ion brand Zara have all apologized
to China for referring to Taiwan,
Hong Kong or Tibet as countries
on websites or promotional materi-
al. And Mercedes-Benz apologized
for quoting the Tibetan spiritual
leader, the Dalai Lama, in a social
media post.
“Everyone — states and com-
panies — seem to accept that they
have to tread on eggshells when it
comes to China for fear of offending
them and being punished,” Sullivan
said in an email. “And they have to
contort themselves to do that.”
A rare exception of a company
standing up to China is Google Inc.,
but even the internet giant had its

Our View

Safe and sorry is a balancing act

There has always been a
fine line between reaction and
over-reaction or even distin-
guishing between the two.
Nowhere in contemporary
American society is this better
illustrated than the subject of
terrorism.
You don’t have to be an
old-timer to recognize this.
For example, there was a time
when you couldn’t find a metal
detector in an airport.
That changed dramati-
cally after 9-11. To get on an
airplane now means going
through metal detectors, even
being patted down sometimes.
Shoes and belts and jewelry
— and anything else on your
possession containing metal
— goes through screening,
too.
By now, it has become so
routine that we hardly seem to
notice.
But are we really safer
because we can’t carry a five-
ounce tube of toothpaste onto
an airplane? Probably not, but
better safe than sorry.
Today, our attention has
turned, quite reasonably, to
domestic terrorism, which in
many ways is an even greater,
more ubiquitous threat.
With mass shootings at con-
certs, movie theaters, festivals
and just about anywhere peo-
ple congregate, our reactions
escalate as we desperately
attempt to make our public
spaces safer.
Nowhere is that concern
more pronounced than in our
schools. We will do anything
— short of gun legislation —
to protect our children. Active
shooter drills, mandated by
law, and conducted through-
out the nation’s schools are
common, including the one
held Tuesday at Starkville
High School which exposed
faculty and staff to an exercise
featuring the firing of blank
ammunition.
Twice in the last month an
effort to promote safety as a
response to terrorist acts has
played out in the Lowndes
County School District, where
two students in separate
incidents were charged under
the state’s new “Mississippi
Terrorist Threats Law.”
Under this law, anyone who
makes a threat of violence is
deemed to have made a terror-
ist threat and is charged with
a felony that carries up to 10
years in state prison. More sig-
nificantly, the law states that
even if the person making the
threat had neither the intent
nor means of carrying out the
act, he or she is still subject to
these penalties.
In other words, the threat
alone is a crime that can send
you to prison for 10 years.
Is that a reasonable re-
sponse? Or an overreaction?
Fair-minded people can
disagree and will.
But at present, it appears to
be another case of better safe
than sorry.
We do believe that making
threats against schools is not
something we can’t afford to
take lightly: We have seen, in
graphic detail, the result of
that attitude.
We also believe that even
idle threats can harm our
students by making them feel
less safe and can disrupt our
educational process through
lock-downs and evacuations.
These are not harmless offens-
es and should not be regarded
as such.
In the case of the two Cale-
donia students, both have been
charged as juveniles under the
terroristic threats law and will
not face 10 years in prison.

what punishment the students

taken with a grain of salt, even
if it means our reaction is an
over-reaction.

Thoughts on two lives taken
Yes, Ms. Cengiz (murdered journalist,
Khashoggi’s fiancé), it can happen in a minute.
After a long time, I read an article in the
recent issue of Time magazine written by Ms.
Hatice Cengiz, that touched my heart profound-
ly.
Being settled in a small town far away from
the place of the murder, I wrote a column in
October 2018 on Khashoggi’s murder, “Bedouin
culture in the 21st century.”
We use a common proverb, “think before you
act and no act then think.” Or “look before you
leap.” I am sure the Saudi government or the
prince (recently taken the responsibility) wasn’t
feeling comfortable one year after Khashoggi’s
murder? What good have they achieved? Will
one journalist’s writings be able to change the
government?
On the other hand, the murderers didn’t only
change the life of Ms. Cengiz. They have alienat-
ed the whole world.
A couple of weeks back, a Houston sheriff’s
deputy, with a turban on his head was shot and
killed during a traffic stop. In a split second,

school year.
The law does not spec-
ify the nature of the re-
quired drills — such as
whether firearms have
to be deployed as part of
the training — presum-
ably leaving that up to the
school districts.

Brown agreed with Mc-
Donnell that active shoot-
er drills are necessary in
a time of regular gun vio-
lence.
“The more realistic you
can do the training, the
better off you are,” Brown
said. “It’s going to have a
stronger bearing on the
minds of the people who
participate in those drills if
they see something that’s
realistic but still safe.”
Shumaker, when asked,
did not explain the specif-
ic protocols the teachers
were taught during the
training.
“In general, we will
stage different scenarios
and they will get a chance
to respond based on what
they learned,” he said.
“We will do different ones
in different parts of the
building so everyone will
get a chance to respond
appropriately.”

any teachers at SHS, Sud-
duth or Henderson Ward

Legally mandated
simulations
Missouri, Arkansas
and Illinois all passed
laws requiring schools
to conduct active shooter
drills in 2013, in light of
the Sandy Hook Elemen-
tary School shooting in
Connecticut. New Jersey,
Oklahoma and Tennessee
later did the same.
Mississippi joined the
group this year after Gov.
Phil Bryant asked the Leg-
islature “to pass a compre-
hensive plan to keep our
school children safe” in
his State of the State ad-
dress in January.
The law also requires
mental health training or
professional development
for school district employ-
ees every two years, train-
ing and certification of
threat assessment officers
through the state Office
of Homeland Security and
for those officers to con-
duct yearly threat assess-
ments for every school in
the state.
The bill passed both
chambers of the Legisla-
ture almost unanimous-
ly, and all five legislators
representing Oktibbeha
County voted for it.

(D-Starkville), though,
still has issues with the
law.
Active shooter drills
are “reactionary” and “an
unfortunate set of circum-
stances hiding a bigger
problem,” he said, which
is the availability of assault
weapons.
“We have twisted and
kind of perverted the
Second Amendment,” he
said. “We have been able
to commercialize a new
weapon of choice that kills
as many people as possi-
ble within seconds.”
Shumaker said the sim-
ulation did not involve fake
blood or injuries, which
other schools and districts
across the country some-
times use in their drills.
National news outlets
including NBC and The
New York Times have re-
ported that active shooter
drills of all kinds can be
traumatic for students, es-
pecially since they are far
more common than actual
school shootings.
They can also leave
teachers feeling “more
traumatized than trained,”
and school security con-
sultants and psychologists
say intense drills like the

sary, school-centric news

But putting teachers
through a stressful situa-
tion during the drill is nec-
essary so they will know
how to process and react
to it in a real-life scenario,
said Dist. 43 Rep. Rob Rob-
erson (R-Starkville), who
is also the attorney for the
Oktibbeha County Board
of Supervisors.
“If someone’s going to
panic or freeze up, I’d rath-
er they do it during a train-
ing exercise than during a
real situation, which may
get themselves or some-
one else killed,” Roberson
said.
A teacher with a mental
or physical impediment
to the simulation, such as
a phobia, can opt out by
providing medical docu-
mentation as proof, Tu-
pelo-based attorney Jim
Waide said. This must be
done before the drill or
else the school cannot be
held liable for any medical
consequences, should the
teacher choose to partici-
pate to the extent of his or
her ability, he said.
“As long as (school ad-
ministrators) reasonably
perceive it as necessary
for the safety of the chil-
dren, they might be go-
ing way overboard and all
that, but I don’t think any
court would question their
authority to do it,” Waide
said.
Some SHS teachers
were anxious in the few
weeks before the drill, but
that was to be expected,
McDonnell said. He com-
pared the active shooter
drill to a tornado drill be-
cause both are precaution-
ary measures in case of
tragedy.
Assistant principal Gin-
ger Tedder said one of the
teachers found the best
way to phrase the situa-
tion despite being upset
about it.
“We’re doing it for the
kids,” she said. “It’s tough
being an adult, but this is a
skill set you have to learn
for the safety and better-
ment of our kids.”

tell teachers if another stu-

State football program follow-
ing losses this season has been
not allowing a single defeat beat
you twice.
After suffering an 56-23
demolition at the hands of then-
No. 7 Auburn two weeks ago,
that has again become a consis-
tent phrasing within the MSU
locker room this week.
“It can go one or two ways:
You can either dwell on it and
allow the same game to try and

With Moorhead’s words in
mind, MSU has boasted a rein-
vigorated mindset heading into
a weekend date with Tennessee
(1-4, 0-2 SEC).
While the Volunteers have
been much maligned this year
for their dismal start and a sea-
son-opening home loss to low-
ly Georgia State, MSU’s head
coach was quick to dismiss the
idea his team could be lax in
their preparation.

feet away from Columbus High
School’s postgame meeting,
C’Asia Grayer stood by herself,
slowly pulling off her batting
gloves. She squatted down and
covered her face with her arms,
her back turned to the rest of
the team.
The Falcons’ senior star
didn’t quite know what to do
with herself now that her final
slow-pitch softball season had
just come to a bitter end at home
against Tupelo. What had been
a 14-7 Falcons lead in Tuesday’s
decisive third game became a
19-14 Golden Wave lead in the
span of just two innings.
So when fellow senior LaPor-
shia Brown grounded out to
the pitcher to end a 21-15 loss
and with it the Falcons’ season,
Grayer, who hit three home
runs in Tuesday’s series, was
visibly upset. After the meeting,

“I don’t necessarily think
the overall record is indicative
of their talent and their per-
formance,” Moorhead said. “I
think they have been really
close in three games and have
done a nice job. They just kind
of came out on the short end in
a couple of games.”
Now almost two weeks re-
moved from the Auburn game
and with a bye week under
their belts, the weeks-old cliché
Moorhead has preached is tak-
ing effect amongst his team.
“They have a lot of young
talent,” Hill said Tuesday. “We
don’t look at their record. Ob-
viously anything can happen
— it’s the game of football — so
we’ve got to approach them like
they’re undefeated.”
Columbus coach Eric Thornton
took her aside for a moment be-
fore sitting with pitcher Delilah
Taylor, the final player remain-
ing in the Falcons’ huddle.
“They’re torn up, but we just
talked about the fight that we
had,” Thornton.
The Falcons dropped the first
game 12-3, but they managed to
stay in the series against a team
they hadn’t come close to beat-
ing in the past six meetings by
holding off a late Tupelo rally
for a 15-12 win.
“We could have easily been
done right then and not come
back in that second game,”
Thornton said.
But behind a rowdy crowd —
“We even stole a few New Hope
fans and brought them over
here,” Thornton said — the Fal-
cons didn’t give up.
“We scored some runs early
and got some things going, and
I think the light went off that,
‘Hey, we can win this thing,’”

put the Falcons away. Mor-

While the season is over
for Columbus, Thornton
knows his team succeeded
in more than enough ways:
a district title, a win in the
first round of the playoffs
and his team receiving its
due for a standout perfor-
mance.
“To see the fan support
tonight, to see the atten-
tion that’s been brought
to the school about soft-
ball, people talking about
it, people showing up and
coming out and support-
ing ... We may not have
even had the best record
that we’ve had in the last
few years, but we brought
more attention to the sport
and to our girls,” Thornton
said. “That’s something
we’re definitely proud of.”
And while Tuesday’s se-
ries had a bitter ending, se-
nior left fielder Aniya Sad-
dler, one of the Falcons’
top players, said she’ll
remember it most from
her slow-pitch career. Not
the loss, however, but how
hard the Falcons played.
The fight they showed.
“We fought really, real-
ly hard to get where we’re
at,” Saddler said. “But it’s
OK. We’re gonna be good.”

and then honestly, I need
those infield singles to
be caught. When you
don’t have it, you need
the balls that are put in
play to go your way, and

lander, who only started
on short rest three other
times during his career,

1 and 3 after Game 1 was

“Obviously, not the
way you would script it,”

A creative twist on Halloween carvings

hen it comes to Halloween,
carving the same pumpkin
designs each year can become
routine. This year, save a pumpkin and
carve your spooky masterpiece into a
watermelon instead.
Nutrient-rich watermelon can be a
healthy alternative to other sweet treats
full of added sugar during Halloween
festivities as it’s a source of vitamins A
and C as well as the antioxidant lyco-
pene and the amino acid citrulline.
Because they are made up of 92
percent water, watermelons can be an
effective way to stay hydrated during
trick-or-treating, and creations like
a Mummy or Jack O’Melon can help
satisfy sweet cravings while keeping
friends and family members frightfully
delighted.
To get started, consider these carv-
ing tips and tricks:
n To make cutting and slicing easier,
the watermelon should be at room tem-
perate when carving.
n Cut a small, thin, flat piece from
the bottom of the watermelon to provide
a stable base for carving.
n Draw the design on the watermel-
on rind with a dry-erase marker before

Small bowl
Blueberries or bloody candy eyes
Toothpicks, pins or glue
n Wash watermelon under cool running water
and pat dry.
n On cutting board, place watermelon on its
side and use kitchen knife to cut off 1/4-1/2-
inch of rind from bottom to provide sturdy base,
being careful not to cut too deep into white part
of rind. Cut 1-2 inches from stem end to create
opening for bowl to be added.
n Using dry-erase marker, draw eyes, nose and
mouth, along with wavy slits around carving.
Use paring knife to cut them out, being sure to
cut through to red flesh to let more light flow
through.
n Use melon baller to hollow out inside of
watermelon. Reserve watermelon balls. Use
scoop to remove remaining watermelon.
n Using vegetable peeler, remove green skin
off outside of watermelon, similar to peeling
cucumber.
n Wrap thin strips cheesecloth or gauze
around mummy carving and secure with
carving and fit small bowl into top of carving.
Trim away excess rind to make bowl fit securely.
n Fill bowl with melon balls. Attach candy eyes
or blueberries using a toothpicks, pins or glue.

n Using knife, cut thin slice from bottom of
watermelon to provide stable base.
n Cut circular piece of rind from top of water-
melon big enough to reach into and remove
flesh. Carefully remove top section and reserve
for use as “lid.”
n Remove flesh from inside watermelon using
melon baller, reserving melon balls for snack-
ing. Hollow out remaining watermelon flesh and
use blender to juice scraps and excess juice.
n Using dry-erase marker, draw outlines of
eyes, nose, mouth, hair, ears and other fea-
tures on side of watermelon. If mistake is made
with marker, wipe off using paper towel to start
over. Following outlines, carve features into
watermelon and remove excess rind.
n Safe, battery-operated light can be firmly
placed inside watermelon to provide haunting
glow.
n Place circular piece of rind back on top of
watermelon.

1/2 cup butter, softened
1 1/2 cups sugar
2 eggs
1 cup sour cream
1/4 teaspoon vanilla extract
2 cups flour
1 teaspoon baking soda

Nonstick cooking spray
Frosting:
1 package (8 ounces) cream
cheese, softened
1/2 cup butter, softened
2 teaspoons vanilla extract
3 cups powdered sugar
n Heat oven to 350 F.
n Peel, slice and mash rip-
ened bananas; set aside.
n In large bowl, beat butter
and sugar until fluffy. Add
eggs, sour cream and vanilla;
blend well. Gradually add in
flour. Stir in bananas. Add bak-
ing soda and salt; mix well.
n Prepare 9-by13-inch baking
pan with nonstick cooking
spray. Pour batter into baking
pan. Bake 20-25 minutes, or
until toothpick inserted into
center of cake comes out
clean. Let cool.
n To make frosting: In large
bowl, beat cream cheese,
butter and vanilla extract until
fluffy. Gradually add powdered
sugar. Mix until well combined.
n Frost cake. Store in refriger-

1 (25 ounce) bag frozen cheese ravioli
1 (24 ounce) jar spaghetti sauce
1 pound ground beef
16 ounces shredded mozzarella cheese
1-2 ounces Parmesan cheese from a wedge
(the shaker can type is fine; it won’t melt as
smoothly but you’ll hardly notice with every-
thing else going on in this dish).
n Preheat oven to 350 F. Set a pot of salted
water on the stove over high heat and cook
ravioli per package directions, minus a minute
or two of cooking time.
n While water heats, brown the beef in a
separate skillet, breaking it up with the back
of a spoon until it is crumbled and browned
through. (To reduce the number of dishes you’ll
have to wash later, do this in a very large,
oven-proof skillet that has high sides and can
handle tomato sauce.)
n When beef is cooked, drain the fat. Mix
beef with spaghetti sauce; I did this in the pot
in which I’d boiled the pasta while the pasta
drained in the colander. Put about half a cup of
meat sauce in the bottom of the large skillet or
a casserole dish and spread it out evenly. Lay-
er on about half the ravioli. Top with about half
the meat sauce. Add about half the mozzarella
and several tablespoons of Parmesan.
n Repeat layers with remaining ravioli, sauce,
and cheese, ending with shredded cheese.
Place in preheated oven until cheese melts and
edges are bubbly, about 30 minutes.

or gravy boat and serve
hot with lamb and sautéed
mushrooms, green beans or
steamed carrots and snap
peas, if desired.
