Scrambled Eggs

in Green Salsa

Mexican cuisine. Offers a wide variety of breakfasts full of nutrients and flavours. Here
we will discuss about the scrambled eggs in green salsa which will make your breakfast
awesome.It is very fresh dish which is full of flavor and also spicy . This is served in
breakfast with some refried beans with some tortilla chips.

Ingredients used in this recipe

 4 Eggs (8.4 oz)


 4 Tomatillos (5.8 oz)
 1 Serrano Pepper (.4 gr)
 1/4 of an Onion (1.2 oz)
 1 Garlic clove (.1 oz)
 1 Cilantro sprig (.3 oz)
 2 tablespoons of Olive Oil
 Pepper to taste
 1/4 tablespoon of Salt

Cookware

 1 Saucepan
 1 Frying Pan
 1 Blender
 1 Bowl
 1 Balloon Whisk or Fork
 1 Kitchen Spoon
 1 Turner

Preparation of this recipe

Prepare the Green Salsa

1. Put in a saucepan:

 4 Tomatillos.

 1 Serrano Pepper.

 The enough Water to cover all the ingredients.

2. Bring the saucepan water to a boil over high heat.

3. Leave the saucepan ingredients cooking in the boiling water for about 5 minutes, until the
tomatillos turn to a lighter color.

4. Transfer from the saucepan to a blender, with a kitchen spoon, the tomatillos and the chili
that were cooked.

5. Also add in the blender:

 1/4 of an Onion.

 1 Garlic clove.

 1 Cilantro sprig.

 Pepper to taste.

6. Blend very well the ingredients, then reserve.

Cook the Salsa

1. Heat in the saucepan over high heat 1 tablespoon of olive oil.

2. Put in the saucepan:

 The Green Salsa that was blended.

 1/4 tablespoon of Salt.

3. Mix the saucepan ingredients and wait for the salsa to boil.

4. When the salsa boils reduce to medium heat and cook it for about 3 minutes, until
it thickens a little; stir occasionally. Then set aside.

Prepare the Eggs in Salsa

1. Crack 4 eggs and pour them in a bowl.

2. Beat the eggs that were put in the bowl with a balloon whisk or with a fork, until they
are well integrated; then set aside.

3. Heat in a frying pan over low heat 1 tablespoon of olive oil.


4. Pour in the frying pan the eggs that were beaten in the bowl and cook them for about 2
minutes, until they are moderately cooked; stir regularly.

5. Pour in the frying pan the green salsa that was cooked and cook the eggs in green salsa
for about 3 minutes, until the eggs are well cooked and the salsa thickens; stir regularly.

This is a perfect dish to accompany with bread or tortillas. The scrambled eggs can also
be prepared with chorizo and they come out very tasty.
