Chipotle Rice

•2 CUPS Jasmine Rice

•1 Lime (juiced)

•3 CUPS Water

•1 Bay Leaf

•2 TSP Salt

•6 TBSP freshly chopped Cilantro

•6 TSP Olive Oil

Chipotle Beef

Ingredients:

-7-8 lbs boneless chuck roast (trim fat and cut into 2-4 inches each)

-5-6 chipotles in adobo sauce (6 tends to be spicier for some, so maybe opt for 4-5)- cut up to small
pieces.

-1 large white onion (grated)

-10 cloves of garlic- minced

-1/4 cup lime juice

-2/3 cup apple cider vinegar

-1 cup beef/chicken broth

-2 tbsp Cumin

-2 tbs Oregano

-1/2 tsp ground cloves

-1 tsp black pepper

-2 tsp kosher salt

-3 bay leaves

-Oil to pan sear chuck roast

Directions:
1. Cut up chuck roast to 2-4 inch cubes and trim any excess fat. Some people like the fat, so how much
you trim is up to you.

2. Oil a pan and sear the majority sides of all pieces of roast. Set into crock pot.

3. In a large bowl, combine the rest of the ingredients (except for the bay leaves) and stir well. You may
optionally blend all ingredients (except the bay leaves) until smooth. If blending, you do not have to
grate the onions. You may cut them into small pieces, then toss in to the blender.

4. Pour sauce over chuck roast in the crock pot. Place bay leaves on top and set crock pot to high for 4
hours, or low for 8 hours.

5. Once ready, take out the chuck meat and shred with a fork. Discard the bay leaves, and place the
chuck meat back into the crock pot. Leave crock pot on warm, and serve when ready by removing
desired amounts of beef as needed.

Ingredients

 2 tablespoons olive oil


 1 yellow onion (finely diced)
 4 cloves garlic (minced)
 1 pound dried black beans (rinsed)
 2 bay leaves
 1 teaspoon cumin
 1 teaspoon dried parsley
 1 teaspoon dried oregano
 1 teaspoon paprika
 1/4 teaspoon chili powder (or more)
 6 cups water (or more as needed)
 Juice of 1 lime
 Salt to taste

Garnish:

 Chopped parsley

Instructions

1. Rinse the beans, sort and discard any that seem bad.
2. Place a large Dutch oven or large stock pot over medium heat, add oil and bring to a
shimmer.
3. Add the diced onion and cook until softened, about 3-5 minutes.
4. Add garlic, stir and cook until fragrant, about 30 seconds.
5. Add the black beans, cumin, dried parsley, oregano, bay leaves, and stir to combine. Add
enough water to cover the beans.
6. Bring to a boil and reduce heat to medium-low, simmer until beans are tender, about 2
hours. Add more water as needed if the beans are not covered.
7. Once done, remove from heat and discard bay leaves.
8. Add the lime juice, add paprika and chili powder, stir to combine. Taste and adjust for
salt and spiciness.
9. Serve over rice with lime wedges.

When I make this chipotle corn salsa recipe I am sure to include roasted poblano peppers, yellow
corn, red onion, fresh lime juice, fresh lemon juice and my favorite, cilantro!

Ingredients

 2 poblano peppers
 1 16 oz. package corn, thawed (or 3 cups fresh)
 1/4 small red onion, finely chopped
 2 Tbsp. fresh lime juice
 2 Tbsp. fresh lemon juice
 ¼ cup chopped cilantro
 1 teaspoon Kosher salt

Instructions

1. Chop the poblano peppers, onion and cilantro.


2. Combine all the ingredients together. Salt to taste.
3. Chill for an hour before serving for best flavor results.
