2. Based on the study of Lopez and Delfin the researchers stated that "Success in business is
defined in terms of rate of return on sales, and age or longevity of the firm" (p. 42). Cuba, Felipe, and
Antonio and Luz and Lito also found that sales, profit, and longevity were important to success. Bagdad
and Sotto noted that high quality services or production was the key to success for firms and was directly
related to effective management and planning, which relied upon effective management decisions.
3. The study of Tanyag based from the book, "There is no generally accepted list of variables
distinguishing business success from failure ..."(p.10). The two most commonly stated variables,
however, that seem to make the difference are capital and management experience.
4. Based on the study of Aquino, he found that management experience may be a significant
factor in achieving success or successful performance in the small business environment. It stated that
"would-be business owners should be concerned to gain related industry, management, and start-up
experience... regardless of the type of industry in which they plan to operate" (p.86).
It was also noted, however, that while experience was a significant factor, it could vary by
industry in importance. This would support Cochran, who suggested that research for specific industries
in specific regions might prove more useful than national studies. This study was referring to research
regarding failures of small businesses; however, this may apply to successes also.
5. “Passion isn’t enough. You’ll need a sound concept and restaurant management experience”
(Miller, 2008, p.13). In order to operate a restaurant successfully one must at least have a restaurant
background or do intense research on the subject. If one has spent his or her working life as an
electrician or doctor, the person is not likely equipped to operate a restaurant. When a person has ten
years experience in a field the person has become more knowledgeable than the majority of the
population in that area and would benefit from opening a business related to that field (Howell, 1997).
People should not open a business in a field where experience was not obtained (Howell 1997).
6. Eating-out plays an increasing role in the human society every day. It is not only
because of the rush of life today, but also due to its huge profitability in the business world,
especially in the restaurant industry. The restaurant industry in the United States represents
47.5% from its total market (NRA, 2006), and this trend is continuously increasing. National
Restaurant Association (NRA, 2007) projected that at the end of this year, the total sales by the
restaurant industry in the United States will reach at an approximate amount of US$536.9 billion,
which represents 66.5% growth compared from the total sales of the last decade. Likewise,
Restaurant and Catering Australia reported that three groups of businesses, including the
restaurant, café, and catering businesses had a significant turnover and dramatic growth in 2006.
In addition, approximately more than 2,000 new restaurants are operating every year over the last
four years (“Restaurant and Catering Industry Association of Australia”, 2007; Hart, 2007)
7. According to Claire Suddath, there are two different versions of buffalo wings’ origin. The first
plate of wings was from Teressa Bellissimo who owned a buffalo establishment called Anchor Bar. The
second was from her husband, Frank, who didn’t know what to do with them when he received the
chicken wings during 1980. The last was from their son, Dominic, who claimed that the wings were just a
snack for them to eat. The origins didn’t contradict with each other but one thing’s for sure—they
started the Buffalo Wings history. For many years, the wings were a regional food found only in New
York and surrounding areas. But something that delicious can’t be kept a secret forever and by the mid-
1980s Buffalo wings had spread across the country. During this day, in Buffalo, though, wings are still
eaten roughly the way they were invented by Teressa in 1964: served in either hot, medium or mild.

8. According to Larry Olmsted, Chicken wings are prepared in a lot of different ways:
grilled, roasted, smoked, baked or breaded like standard fried chicken. But “it’s only a
Buffalo wing if it is deep-fried and it has a cayenne-pepper based sauce those are the two
parameters,” said Drew Cerza, better known as The Wing King. Cerza is the creator of
the National Chicken Wing Festival, held last weekend and every Labor Day at Coca-
