Carrot Soup

Ingredients

1 tablespoon butter
1 tablespoon extra-virgin olive oil
1 medium onion, chopped1 stalk celery, chopped
2 cloves garlic, chopped1 teaspoon chopped fresh thyme or parsley
5 cups chopped carrots
2 cups water
4 cups reduced-sodium chicken broth, “no-chicken” broth (see Note) or vegetable broth
½ cup half-and-half (optional)½ teaspoon salt
Freshly ground pepper to taste

Preparation
1. Heat butter and oil in a Dutch oven over medium heat until the butter melts. Add onion
and celery; cook, stirring occasionally, until softened, 4 to 6 minutes. Add garlic and
thyme (or parsley); cook, stirring, until fragrant, about 10 seconds.

2. Stir in carrots. Add water and broth; bring to a lively simmer over high heat. Reduce
heat to maintain a lively simmer and cook until very tender, about 25 minutes.

3. Puree the soup in batches in a blender until smooth. (Use caution when pureeing hot
liquids.) Stir in half-and-half (if using), salt and pepper.

Crab and Asparagus Soup

Ingredients
 1-1/4 cups chopped sweet onion
 1 celery rib, chopped
 2 tablespoons butter
 2 tablespoons all-purpose flour
 1/2 teaspoon seafood seasoning
 1/4 teaspoon salt
 1/4 teaspoon pepper
 1/8 teaspoon ground nutmeg
 1 cup water
 1-1/2 teaspoons chicken bouillon granules
 2 medium red potatoes, cubed
 8 ounces fresh asparagus, cut into 3/4-inch pieces
 2 cups half-and-half cream
 1 can (6-1/2 ounces) lump crabmeat, drained
 Optional toppings: chopped fresh parsley and cracked pepper

Directions
 In a large saucepan, saute onion and celery in butter. Stir in the flour,
seafood seasoning, salt, pepper and nutmeg until blended; gradually
add water and bouillon. Bring to a boil; cook and stir for 2 minutes or
until thickened. Stir in potatoes. Reduce heat; simmer, uncovered, for
10 minutes.
 Add asparagus; cook 8-12 minutes longer or until vegetables are
tender. Stir in the cream, crab and parsley; heat through. If desired,
sprinkle with parsley and pepper.
