Food Processing

I. Objectives:
At the end of the lesson, 75% the Students should be able to:

Atchara, LCD Projector, laptop and Manila paper.

1. Place the Julienned papaya in bowl combine ¼ salt mix until well
distributed.
2. Rinse with running water In a colander
3. Use cheesecloth and squeeze until all liquid comes out.
4. Combine, Carrots,garlic,paminta,Bell pepper,ginger
5. Heat the sauce pan pour-in the vinegar add sugar until diluted
6. Turn off the heat and allow the syrup to cool down
7. Place the combine vegetables and spices in a clean jar.
8. Pour-in the syrup seal the jar and place inside the refrigerator.

Let’s talk about brief history of Atchara .

>Pickling originated in India


>in Indonesia they call it ACAR made from small chunks of Cucumber,carrots and pineapple marinated
with sugar and Vinegar.
> In Malaysia they call it Malay ACAR containing additional Vegatable such as eggplants as well as
aromatic spices in the pickling mix.
>in the Philippines they Call it Atchara from Unripe papaya

Major Ingredients of ATCHARA


Vegetables are parts of a plants that consumed by animals or human as food.
Vinegar – is aqueous solution of acetic acid and trace chemical that may include flavorings.
Sugar- is a sweet tasting Soluble carbohydrates
Spices – is a seed fruit,root bark use for flavoring.

IV. Evaluation

I will group you in to 4, each group will assign in designated table.


Each table will give an example of a ready-made Atchara in small Plate
Task:
1. Identify the Ingredients of Atchara by using of 3 senses .
2. Each Team will give 5 minutes to write in the manila papers
3. Each member will also write the answers in a ¼ sheet of paper as their quiz.
4. The member will choose one student to deliver their presentation.

2 pcs. Papayas
1 clove of garlic
1 pcs. Of ginger big
¼ cup salt
¼ kilo sugar
1 tbsp pepper corn
1 bottle of Vinegar
1 pc. Of Carrot
