Abstract
This paper presents the methodology of a mathematical modeling and simulation to describe
the dynamic behavior of a bioreactor in the process of alcoholic fermentation for the
production of white wine within the company Unión Vinícola Internacional S.A. A kinetic
model was used to simulate fermentation from basic principles such as the balance of matter
and energy. The concentrations were plotted with respect to the time of: the biomass, the
substrate, the product and the temperature. Finally, the simulations were carried out in a
programmer called MATLAB, in which it was possible to see how the concentrations
mentioned above varied with respect to time.
