INTRODUCTION
Components of fruits juices :
Carbohydrates
Carbohydrates are polyhydroxy aldehydes, which have
an aldehyde or ketone group. They have a general
formula CnH2nOn . Carbohydrates yield 18KJ of energy .
the monosaccharide serves as a building block. Glucose
is also used for the formation of fats and amino acids.

Minerals
Minerals form 1-3% of the cell contents. Any marked
change in the concentration results in the
malfunctioning of cells and finally death. Some minerals
presents in our diet are :
 Calcium
It is a major component of the bone and the teeth.
Calcium is required for blood clots, muscle contraction,
nerve impulse transmission and heart functioning.
 Iron
Hemoglobin in our body contains iron which is the
universal carrier of O2 and CO2 . Deficiency of iron
causes anemia due to failure of hemoglobin synthesis.

Test for acidity: pH=4 acidic
Take 5ml of orange juice in
a test tube and dip a pH
paper in it
Test for starch: Absence of blue No starch is
black color. present.
Take 2ml of juice in a test
tube and add few drops of
iodine solution. It turns
blue black in color if starch
is present.
test for calcium: No yellow Calcium is
precipitate. present.
Take 2ml of juice add
ammonium chloride and
ammonium hydroxide
solution. Filter the solution
and to the filtrate add 2ml
of ammonium oxalate
solution.

Test for Red colored Carbohydrates
carbohydrates: precipitate is are present.

Take 2ml of juice and add
1ml of Fehling’s solution A
and B to it and boil. Red
precipitate indicates the
presence of producing
sugars like maltose,
glucose, fructose and
lactose

Result: Orange juice is acidic. It lacks calcium and


starch. It consists of carbohydrates.

Take 2ml od juice in a test
tube and add ammonium

the solution and add

solution.

Conclusion

The orange, lemon and pineapple juices were


analyzed and all the samples were found to be
acidic. Carbohydrate is present in all samples,
while starch and calcium are absent in all of them
