INTRODUCTION
Components of fruits juices :
Carbohydrates
Carbohydrates are polyhydroxy aldehydes, which have
an aldehyde or ketone group. They have a general
formula CnH2nOn . Carbohydrates yield 18KJ of energy .
the monosaccharide serves as a building block. Glucose
is also used for the formation of fats and amino acids.
Minerals
Minerals form 1-3% of the cell contents. Any marked
change in the concentration results in the
malfunctioning of cells and finally death. Some minerals
presents in our diet are :
Calcium
It is a major component of the bone and the teeth.
Calcium is required for blood clots, muscle contraction,
nerve impulse transmission and heart functioning.
Iron
Hemoglobin in our body contains iron which is the
universal carrier of O2 and CO2 . Deficiency of iron
causes anemia due to failure of hemoglobin synthesis.

Test for acidity: pH=2 Highly acidic.
Take 5ml of lemon juice in
a test tube and dip a pH
paper in it.
Test for starch: Absence of blue Starch is
black color absent.
Take 2ml of juice in a test
tube and add a few drops
of iodine solution and add
ammonium oxalate
solution.
Test for calcium: No yellow Calcium is
precipitate. absent.
Take 2ml of juice and add
ammonium hydroxide
solution. Filter the
solution and add
ammonium oxalate
solution.

Test for Red precipitate. Carbohydrate
carbohydrates: is present.
Take 2ml of juice and add

Result: The lemon juice is highly acidic. It lacks
calcium and starch. It contains carbohydrates.
