Lá dứa hay dứa thơm (Pandanus amaryllifolius) là một loài thực vật dạng cây thảo miền nhiệt đới dùng làm gia vị trong ẩm thực Đông nam Á như Việt
Nam, Thái Lan, Mã Lai Á, Nam Dương và Philippines, nhất là trong những món quà ngọt tráng miệng.
Lá cây lá dứa hình dài, hẹp và thẳng như lưỡi gươm tụm lại ở gốc như nan quạt. Cây này gần như không mọc hoang nữa mà phần lớn được trồng để
thu hoạch lá.
Lá dứa được dùng ở dạng tươi hoặc đông lạnh.

Dứa thơm - Pandanus amaryllifolius Roxb. (P. odorus Ridl.), thuộc họ Dứa dại - Pandanaceae.

Mô tả: Cây bụi cao đến 1m, thân rộng 1-3cm, chia nhánh. Lá rất thơm, mùi dịu, không lông, xếp hình máng xối, dài 40-50cm, rộng 3-4cm, mép không
gai, mặt dưới màu nhạt, có nhiều gân cách nhau cỡ 1mm.

Không thấy ra hoa.

Bộ phận dùng: Lá - Folium Pandani Amaryllifolii.

Nơi sống và thu hái: Cây của miền Malaixia, được trồng để lấy lá thơm dịu bỏ vào thức ăn và hấp cơm cho có mùi thơm. Lá thu hái quanh năm.

Tính vị, tác dụng: Lá có mùi xạ rất đặc trưng mà các loài Pandanus khác không có. Mùi này do một enzym không bền vững dễ bị oxy hoá.

Công dụng, chỉ định và phối hợp: Lá dùng trong việc nấu nướng, ví dụ như cho vào cơm, bánh gạo cho thơm; còn dùng nhuộm hồ cho có màu xanh
Chlorophylle. Lá dùng phối hợp với một số vị thuốc khác, nấu nước xông giúp cho các bà mẹ mới sinh con thêm sức khoẻ và có da dẻ hồng hào.

Là cây hương liệu cổ truyền ở Malaixia và cả ở Inđônêxia người ta cũng đều gọi là Dứa thơm.

Pandanus amaryllifolius is a tropical plant in the screwpine genus which is known commonly as pandan and used widely in Southeast Asian cooking. It
is an upright green plant with fan-shaped sprays of long, narrow, bladelike leaves and woody aerial roots. The plant is sterile, flowers only very rarely,
and is propagated by cuttings.
The plant is rare in the wild but cultivated widely for use as a flavoring in cooking. The leaves are used fresh or wilted, and are commercially available
in frozen form in Asian grocery stores in nations where the plant does not grow. They have a nutty, botanical fragrance which enhances the flavor of
Indonesian, Singaporean, Filipino, Malaysian, Thai, Bangladeshi, Vietnamese and Burmese foods, especially rice dishes and cakes. The leaves are
sometimes steeped in coconut milk, which is then added to the dish. They may be tied in a bunch and cooked with the food. They also may be woven
into a basket which is used as a pot for cooking rice. Pandan chicken, or gai ob bai toey, is a Thai dish with chicken wrapped in pandan leaves and
fried. The leaves are also used as a flavoring for desserts such as pandan cake and sweet beverages.
In Bangladesh it is called Ketaki along with the other variety of Pandan there (Pandanus fascicularis) and is used there to enhance the flavor of Pulao,
Biriyani and the sweet coconut rice pudding, Payesh. In Indonesian it is called pandan wangi, soon-mhway in Burmese, and in Vietnamese it is called
lá dứa. The leaves of the plant have a repellent effect on cockroaches.
The characteristic aroma of pandan is caused by the aroma compound 2-acetyl-1-pyrroline which also gives white bread, jasmine rice and basmati rice,
and bread flowers (Vallaris glabra) their typical smell
Bottled pandan extract is also available in shops, but it often contains artificial green food coloring.
