The skills of 21st century is a necessary skill for dealing with changes and problems in the days to come,

these skills are expected to emerge after the students receive education [1]. The ideal learning such as
project-based learning and problem-based learning, because it involves the principle 4 c that is critical
thinking, communication, collaboration and creativity [2]. Most teachers still apply the conventional nature
of learning, where learning is generally only coached convergent thinking processes, so that when faced
with a problem, students will solve those problems [3]. Teachers need to use an approach to learning that
can train a scientific attitude of students learning approaches such as STEM [4]
The STEM approach can train students' ability to solve problems that exist in the real world and use
mathematics, and technology in problem solving. This means that through the STEM approach students are
not just memorizing concepts, but rather understanding the concepts of science and their relationships in
daily life such as through practical activities [5]. STEM learning can be applied in practical activities which
is one of the important learning activities in Chemistry [6].
Through practical activities to especially chemicals, will train the students get used to plan learning,
implementing, and evaluating learning the lesson that independently, so the scientific ability of students in
aspects of knowledge and competence Science can be optimized through practical work based learning
application of STEM [7] But based on the results of a field survey of HIGH SCHOOL Jatituh learning lab
course used schools contain the procedure practical models cook book. through practical work with students
using conventional methods at all not built to do the steps of scientific attitude. Thus required a design
development of innovative and creative teaching to build students ' scientific attitude.
Design of teaching-based STEM is expected to be one of innovation in pemebalajaran for building a
scientific attitude in students, by observing phenomena in the life of a day-a day that can cause the curiosity
of students there arise the question is inside a students to find answers to the phenomenon [8]. One of the
learning teaching in chemistry, i.e. colloidal material, such as the manufacture of probiotic ice cream which
is expected to be able to bring the real world in students so that required a lab course with pemamfaatan
waste environment one i.e. by making use of waste pineapple skin that can be used as probiotic ice creams,
In fact the community ignore the quality of the skin of a pineapple so rarely processed into something useful
[9]
