Twenty One Plates is an extension of our kitchen and home and just like your

own, it is a place where you can enjoy a comfortable and private meal with family
and friends. Separate dining areas, in varied sizes, keep conversations and company
private; our BYOB policy allows you to bring that special bottle of wine, corkage-
free; and the service and menu flexibility we provide might be a little hard to find
anywhere else, except, well, your home. But as this is a restaurant too, know
that you will sometimes have to dine with strangers next to you, ask to be billed
because, after all, we’ve done the shopping and cooking for you and cannot really
ask to stay on for as long as you like for obvious reasons.

The menu, which may change up to three times a year, is an eclectic mix of
our family’s old and new recipe favorites and our latest experiments inspired by the
world’s best cuisines.

It’s not all strictly “fusion” as what most people thought the initial menu
to be. Whether the plate you are about to have is from the chef’s family’s
hand-me-down recipes or a re-creation of a dish we’ve sampled from a place far
away or one of our happy innovations, it is always for you to enjoy. Because
whether we eat for the sake of simple nourishment or pure enjoyment, we all
know that food always has to be beautifully good and wonderfully beautiful.

Oh, and do know that good food takes a bit of time. It’s not an excuse
for being slow. It’s just how it is when most of the food in our kitchen is
cooked as you order them. Ask company to be served all at the same time or if
some of you don’t mind the wait, we will serve each plate as soon as they’re done.

Enjoy your meal.

Menu 06, November 2010 – February 2011

parmigiano reggiano.

Fresh chunks of tomatoes and cucumbers, onion and green bell pepper rings,
black olives and feta cheese are dressed with our own delicious sukang iloko
vinaigrette. The dressing gives this traditional salad a delicious new twist.

the classic caesar, 250Php

There are just some classics you don’t mess with. Romaine leaves and romaine
hearts are tossed in an emulsion of garlic and anchovies, egg yolk and extra-
virgin olive oil and then topped with freshly ground pepper, bacon bits, grated
parmigiano and homemade croutons. No bottles were opened in the making of
this dressing.

garden salad with goat cheese and sherry vinaigrette, 250Php NEW!
Mixed greens with tomato chunks, onion rings, and shoestring carrots tossed in
sweet sherry vinaigrette with a nice chunk of local and organic goat cheese.
soups
Ask our waiters for what’s available today.
All soups are served with toasted French bread and butter.

creamless creamy tomato soup, 120php

It is exactly what the name says. It’s the only soup served with herbed cream
cheese on toasted French bread because the tomato asks to be paired with it.

spiced kalabasa soup, 120php

Spiced with garlic, leeks and cumin, this kalabasa soup will warm you on a cool
day.

cream of mushroom soup, 200php

Mushrooms. Chicken stock. Cream. And love.

minted pea soup, 150php

Creamy pea soup with a hint of mint. A true vegetarian delight.

just broccoli soup, 250Php

Broccoli, water, salt and a pinch of pepper warm up to a slice of locally made
organic goat cheese. Decadently pure.
starters
They amuse and tease.

fried feta, 200Php

Feta cheese lightly toasted in olive oil. Served with four slices of French bread.
Serves two.

tina-paté, 180Php
The humble tinapang bangus gets some serious lovin’ from cream cheese and
chives. Served with toasts and crackers. Serves two to four.

tuna croquetas, 200Php

Breaded and deep-fried mashed potatoes with tuna and garlic-mayonnaise for
dipping. Six pieces can be shared by two to three people.
fried chorizo, 220Php (half order)
We could serve the chorizo as is but we threw in the mini baguette so you can
mop up the lovely extra virgin olive oil it was fried in. Serves two.

crispy chicken skin and bleu cheese, 220Php

Forget the vinegar. This pulutan loves to get French-kissed. Blush. Serves two.

crispy tadyang, 330Php NEW!

to be your favorite salpicao. Serves one to two.

main plates
The giving share,
the hungry may want it all for himself. Serving portions are happier
than most.

egg, rice, pasta and noodles

1 chorizo omelet, 330Php NEW!

You’re probably wondering, what’s an omelet doing in this menu. Simple. We
know of a man who can wake up and go to bed with this in his tummy. Chorizo is
lightly fried in olive oil and is then joined by garlic, leeks, tomatoes, one red
labuyo and three beaten eggs. It is then finished with melted muenster cheese
and fresh spinach dressed in lemon and olive oil. Served with your choice of
toast slices or garlic rice.

2 kimchi rolls, 200Php

This 8-piece beef bulgogi and sushi rice rolls wrapped in kimchi was formerly on
the starters menu but is now on the main menu because it can be a satisfying
meal on its own.

3 risotto bianco, 290Php V

A simple and rich rice dish with butter, mushrooms and vegetable stock. Cooked
patiently for 30-minutes.
4 twenty one plates paella - all meat or seafood

5 capellini with aligue, 220php

Light angel hair pasta with a deliciously sinful aligue sauce.

6 aaron’s taco pasta, 270Php

Ground beef, fresh tomato salsa,
jalapeño-cheese sauce and nachos cascade down to angel hair pasta and lettuce.

7 spaghettini with sundried tomatoes and chorizo, 270Php

This dish takes you on a gastronomical Mediterranean vacation.

8 laing lasagna, 290Php

Laing goes in between lasagna sheets for an interesting dish. Topped with
mozzarella and grated Parmesan.

9 goat cheese and salami ravioli in lemon cream sauce,

280Php, NEW!
The inspiration behind this ravioli dish is a cheese plate. We’ve paired cheese
with a cold cut and put it in between fresh pasta sheets. The sauce is kept light
and bright by combining wine, cream and lemon zest. Rounding out our cheese
platter concept, we top the dish with some toasted walnuts and grated
parmigiano.

10 spicy (sweet potato) noodles with prawns and tofu, 290Php

It’s similarity to jap chae stops at the use of the sweet potato noodles
(sometimes called Korean glass noodles) and a soy based sauce because instead
of being sweet, it’s spicy and beef and shredded vegetables have been replaced
with prawns, bell pepper, mushrooms and tofu. Not too many people have
ordered this but everyone who has orders this dish over and over.

11 thai curry fettuccini, red or green, 220Php, NEW!

add chicken, 80Php
add prawns, 150Php
One night a friend came by and asked if we had something with curry. This
fettuccini dressed in your choice of traditionally made green or red thai curry
paste is much improved version of what we made for her that night. Fragrant
and creamy, this is sure to be a favorite.

fish, chicken, pork, lamb and beef

Steamed white fish on a bed of Chinese cabbage and topped with crisp ginger,
leeks, chives and coriander. Delightfully simple.

different but it works! Served with a lettuce, cucumber and tobiko salad.

with ox tripe, face and trotter and whole tomatoes to make it richer and more
flavorful.

19 salt and pepper wagyu, 138Php/oz NEW!

We didn’t want to do much more to something as special as tajima wagyu except
to season it with salt and pepper and pan-grill it with olive oil and butter. Served
with buttered vegetables.

20korean beef stew, 330Php

Beef short ribs marinated, seared and slow-cooked in a flavorful soy and sugar
mix. Guaranteed love at first bite.
