After 1 year working as a Chef in New Zealand, then I started to speciali-
ze in pizzas. I´m comfortable making dough from scratch to the house
recipe, also open the dough by hand and use the Wood fire oven. I´m
used to being responsible for my own station, from opening to clean-up
and closing. I have good understanding of stock rotation and of how
minimise waste.

It is my pleasure to recommend Felipe Mery for your open chef position. Felipe has
been working for Spoke sice December 2017 when first opened our pizzeria.
Not Only was he the head chef at Spoke for the pizzeria he was responsible for crea-
ting the, sourcing all equipment needed to make the dough and pizzas, hiring and
trainig of staff to assist him and ordering all the supplies. He was always conscious
about keeping the cost low, so he always only ordered what we needed and built up
gradually as we got busier. He also ensured the staff he hired worked only the hours
that were necessary. He is very passionate about cooking and always did the best he
could to make the customers happy. Felipe has excellent skills with dough making and
starting a wood fire oven on his own and maintaining the temperature. He is more than
capable of cooking very high volume of gourmet pizzas. He will be an asset to any
bussines.

He leaves us to gain new challenges but leaves with the pizzeria thriving. If you have

My name is Jessica Salmon and I am the manager at Pocket Pizza, an American-
inspired pizza parlour and sandwich shop operating in Manly, Sydney. We pride
ourselves on being the number one rated restaurant in all of Manly, using ingredients of
the highest quality, hand-making our own dough, as well as delivering exceptional pizza
and service day-after-day.
Felipe Mery worked in the Pocket Pizza kitchen crew from 22/11/16-15/04/17 and was
a great asset from day one! He brought a solid culinary background and passion for
learning new skills that made him an ideal candidate for the position as pizza chef.
From day one he naturally fitted within the team and was quick to learn the necessary
skills in order to achieve our standards. Shortly after that, Felipe progressed into
working the lunch shift which required him to work independently; completing daily
tasks vital for the overall success of the kitchen.
Felipe’s skills include great social communication which is important within a team
environment, willingness and interest in learning new skills on all aspects of the floor,
maintaining a high-level of quality in his work, ability to take on feedback and criticism
and a nurturing nature which was evident in him teaching new members of staff.
