SELF-PASTEURIZER
“ELECTRONICS” MANUAL
This manual gives information and procedures to assist technicians in setting up and possible repairing of the
machine.
On its turning on, the machine carries out an operating self-test of the monitor and all leds light up.
The machine returns to the function where it was when the machine was switched off.

SOFTWARE VERSION

As machine is turned on , the display indicates the software version.

Es.:
vER 76 means version 76

followed by the machine model for example on 380/50/3 or 220/50/3 .......

MOD4 means machine model 4

In case the machine does not work, your Technician will have always to specify this number
( software version), as well as machine serial number you will find on data plate, so as to take best
advantage of Carpigiani Technical Service.

DISPLAY

The monitor normally indicates the temperature in the hopper and, during Ice Cream production, it shows
product consistency.
The first digit appearing on the monitor indicates the status of the machine.
In Production and while displaying value of ice cream consistency, the first digit is a P .

While heating or cooling, the first digit informs us which solenoid value is ON:

means heating the hopper

means heating the cylinder

means cooling the hopper

means cooling the cylinder

In Pasteurization and during the 30' pause the first digit is an S.

AVAILABLE CONTROLS

FUNCTIONS

STOP :

In this function the machine is OFF and relative led is ON.


From Stop position any other function may be selected. In order to change a function, IT IS ALWAYS
NECESSARY to first return to STOP.
The display shows the actual time clock.

STOP PUSH-BUTTON IS ALSO USED TO RESET ANY ALARM.

DISTRIBUTION :

The product is cooled down until HOT reaches the programmed value at step 0 (pro 0).
On reaching the desired consistency (SET 1 HOT) the beater keeps on running 3 more seconds and then it
stops; on the contrary, the compressor remains ON and hopper solenoid valve is energized instead of the
cylinder one in order to bring mix in the hopper to storage temperature.
After reaching of SET 1 HOT, beater starts each 10 minutes in order to check ice-cream consistency: if it
is lower than (SET 1 - hysteresis), compressor starts together with cylinder solenoid valve in order to cool
down ice-cream to the programmed consistency.

It is possible to change ice cream consistency (PAYING ATTENTION NOT TO EXCEED RATING
ABSORPTIONS OF BEATER MOTOR) as follows:

While the machine is in distribution, push Programming push-button then followed

by .

The display will indicate the SET 1 HOT value.

Modify SET 1 HOT to the desired value by pressing push-button INCREASE in

order to increase value and DECREASE in order to decrease it.

Push Programming push button in order to store the new SET 1 HOT value and
continue the distribution.

If, by two-cylinder machines, ice cream is taken out of one cylinder, only, the difference in temperature
(TE1 and TE2) at evaporator outlet will be ≥3°C and, consequently, ice cream will not be cooled up to
SET 1 HOT but to SET 2 HOT.

While cooling, the monitor will display consistency value of product inside the cylinder, and the first digit
being display is a P. When ice cream reaches consistency set value, cylinder solenoid valve will switch off
and tank solenoid valve will switch on, if need be.

NOTE:

If the low level indicator switches ON, the machine will allow about 10 more portions
only; after that, the machine will pass automatically from Distribution to Storage.
It’s not possible to go back to Distribution when you fill the hopper with mix.

STORAGE :

Storage has the function to bring hopper product to the temperature of +4°C.
The monitor displays temperature inside the tank and the first digit shows which solenoid valve is ON.
If cold is necessary to cylinder and hopper at the same time, cooling gets cyclic:
30 seconds for hopper and 15 secs for cylinder.

PASTEURIZATION:
This process cannot start if mix in the hopper is below the medium level.
If level sensor inside the tank is out of order, medium level led blinks and, as a consequence, Pasteurization
will not start. The machine will so beep 5 seconds long and then will switch to STORAGE automatically (
no pasteurization will follow ).
In order to force Pasteurization even if medium level led blinks, it is necessary to press press Pasteurization
push-button , release it and then keep it down 5 seconds. By this, you will “skip” tanl level
check block.
The product either in hopper or in cylinder is heated up to 65°C, kept at this temperature for a time of 30
minutes (fixed), and then cooled down to reach the storage temperature.
At the end of the cycle, the monitor displays “ PASTO END ”, meaning that the pasteurization process has
been correctly performed.

If you want to eliminate the 30 minutes pause after reaching 65°C, then press Pasteurization push-button
for 2 sec. ; so you move to Cooling cycle without the 30 minutes pause.

During Heating cycle, compressor heats cylinder and hopper cyclically and the first digit shows which
solenoid valve is ON.

During 30 min. pause in pasteurization, the first digit on the display indicates S.
The beater motor runs for 15 sec and stops for 2 minutes until pause time has elapsed.
If the cylinder needs to be heated during the pasteurization pause, the beater motor runs for 15 sec. and
stops for 30 seconds.

In Pasteurization cycle, the beater in the cylinders turns cyclically during Heating, pause, Cooling (+65°C
down to +20°C in cylinder) and since the moment when the cylinder reaches storage temperature.
The beater inside the cylinder normally runs 15 seconds and stops 30 seconds.
During cooling, from +20°C down to cylinder storage temperatures, beating is continuous.

HEATED CLEANOUT:

This function is used to thaw ice cream inside the cylinder. Only does the cylinder be heated to 40°C, then
the machine will automatically set at STOP.
This function can be used independently of tank mix level.
The monitor will display TEC cylinder temperature.

CLEANOUT:

Only does the beater run; 5 minutes after selecting this function, the machine automatically sets at STOP so
that excessive wears by beater and cylinder are avoided.

WEEKLY CLEANOUT

By pushing button, on the display you can read the number of days remaining to the next cleaning.

For example: by pushing we get WASH -8 GIORNI , i.e., still 8 days to the next cleaning.

Two days before cleaning date, the machine gives the message “WASH -2“ whenever

you push distribution button.

One day before the cleaning day, the machine gives the message “WASH -1“ whenever

you push distribution button.

The day you must wash the machine, the distribution function will be blocked and the machine remains in
storage position.

WATER INLET (WASH)

Water inlet can be performed in STOP, CLEANOUT OR HEATED CLEANOUT.

Water inlet starts by pushing TANK WATER INLET

Water inlet can end in three ways:

a) by reaching the high level sensor.


b) by pushing the same push-button for the second time.
c) by pushing STOP button

By reaching the high level sensor the water inlet stops but not definitively; in fact, the machine is in a state of
"automatic topping up" which is indicated by the blinking of water inlet led, this means that if the level of
water drops below the “ high level sensor “, water gets automatically in the hopper to reset the high level of
water.
If MIN level is not covered and relevant led is on, water inlet is abled in STOP.

DRY FILLING: Optional function

A Dry-Filling can be executed out by selecting one of the following functions, only:

- STOP
- DISTRIBUTION

Dry Filling process cannot start if the medium level is covered.

During a Dry Filling process, water is not stopped by exceeding the maximum level.
At the end of a Dry Filling process, the abeater in the hopper starts running with a 10 secs delay and for a
time of 11 or 16 minutes. This time depends on mix level reached during a Dry Filling. If mix level is below
the medium one, beating time lasts 11 minutes, otherwise it lasts 16 minutes.

During a Dry Filling cycle, the machine automatically sets at STOP ( respective led is blinking ).
10 seconds after Dry Filling cycle end, the beater starts again.
1 minute later, the machine returns to the mode where it was before Dry Filling process was performed.
During water inlet, monitor displays litres and centilitres countdown.

When water inlet has finished, monitor displays countdown of distribution block time ( 3 minutes ).

The quantity of water to be delivered can be programmed as follows :

Push Dry Filling button , the led will start blinking and the display indicates the quantity of
water in litres that is going to be delivered in the hopper.

If you need to change it, push or buttons to increase and decrease the value.

After selecting the desired quantity ( and while the led is still blinking ) push or
buttons again to execute a Dry Filling.
If you change your mind and don’t want to make a Dry Filling, just do not push any button for 5 sec. then
the led will get off and the machine returns in the same function where it was.

EXECUTION OF A DRY FILLING

In the function where it is allowed, first push Dry Filling push-button and while the led is

blinking, push Dry Filling button again.

Example of what happens during a Dry Filling:

1) Machine set at Distribution.

2) Push button to select Dry Filling.

3) Push again to confirm water quantity shown on display and start water inlet.
4) Machine automatically sets at Stop.
5) Water inlet start for Dry Filling process (and count down on the display).
6) Water inlet stop.
7) Hopper beating start after 10 seconds.
8) Return to Distribution after 3'.
If a Dry Filling is executed in Distribution program and tank level is not over the minimum, the machine will
NOT automatically return to Distribution, but 10 seconds after water inlet stop, only will the beater inside
the tank start; to enter Distributrion again, you will have first to push Stop and then Distribution again.

If the minimum level is exceeded by pouring an already amalgamated mix into the hopper, the machine
immediately returns to Distribution.

CLOCK ADJUSTMENT

To set the internal clock of the machine it is necessary to set the machine at STOP.

By pushing the display will show HOUR, then push to set the value of the

current hour by pushing and , and then adjust the exact value.

By pushing the display will show MINUTES, then push to set the value of the

current minutes by pushing and and then adjust the exact value.

Proceed this way i.e. push and then to adjust all the values:

At the end push STOP to go back to STOP.

CONE-COUNTER:

To display the number of portions dispensed, push .


The number is displayed for 2 seconds.

To reset the portion counters to 0, unplug the machine, push , then plug it again keeping down

until you can hear a beep.

INFORMATION ON DISPLAY

It is possible to read the following messages on the display, one at a time:

- Push Decrease push-button in order to select the desired parameter.

ALARMS

° CHECK
The machine is equipped with a self "CHECK" device that informs us about possible machinetroubles.
The "CHECK" led blinks when there is any alarm and it remains ON, to remind us that an alarm tripped.
Push STOP to read the last alarm that occurred.
When the check led is ON ( or blinking ), verify from table below if you must call the technician or not. In
case you must call the technician, push STOP to read last alarm for once and inform your technician about
it. The machine can be used in distribution even if there is an alarm; if the alarm is a critical one the machine
will not allow you to go in distribution; in this case push STOP and do not use the machine until the
technician repairs it.
Alarms available on the machine are reported in the table below :

BLACK OUT

In the event of a black out , if the machine was in:

Cleanout, Heated Cleanout, Heating in Pasteurization or Pause during Pasteurization,

on its return, the machine sets back at the function where it was before power failure.

If the machine was in :

Storage, Distribution or Cooling phase of Pasteurization,

on its return, the machine checks the temperature and how long was the power failure; if a black out lasts more
than what indicated in the table, the machine will repeat the pasteurization completely with the CHECK led
ON and AL15 in the “events list“.
Otherwise, if the time is less than the one indicated in the following table, the machine will return to the function
where it was before black out.

AUTO SET UP AND MACHINE MODEL

If necessary, autosetup has to only be done after authorization by Carpigiani personnel.

CAUTION: Every time a new machine model is inserted, sensor offset are zeroed. It is consequently
advisable to always carry out a Download Memory before an autosetup.

The procedure sets all programmable values according to the one indicated in the “ typical value column”.

To do that, unplug the machine, push , then plug it again.

Keep down until the machine model is displayed:

Mod _ _

Using and buttons , select the Machine Model Number taken from Programming table in
Mod. line.
Press then

to confirm.

If you don’t confirm through push-button , the Machine Model will not be stored.
The machine is so programmed according to the values indicated in the corresponding column.

EVENTS LIST

The machine is provided with a large memory that helps us store most of the events (function you select,
alarms , ...).

To read the events stored in the memory you must have the machine in STOP, then push
and keep pushing it for 5 seconds.

On the display you’ll get the last event followed by the MONTH-DAY, HOUR and MINUTES.

To scroll all events backward (starting from the most recent one), push each time you desire to
read the previous event.
If you don’t push any button for 30 sec. or you push STOP the machine will go to STOP.
The events list helps us understand when and how many times a certain alarm has occurred.
More over, we can have a report that tells us about the pasteurization cycle and check :

PROGRAMMING for technician

A technician may change some machine parameters.


In order to enter the Program mode, it is necessary to have the machine in STOP,

then push buttons sequentially.

At this stage we get the first step in the program displayed.

Push to read the value that may be changed by means of Increase

and Decrease push-buttons.

In order to go to the next step, push Programming push-button ,

• So by pushing you go to the next program step.

• By pushing you get the value programmed at this step.

• Use and buttons to modify this value.

In order to leave the program mode, push STOP.

When increasing this number, one gets harder ice cream and also an increase in value of
beater motor absorption.
It may be set 0 to 124.

P02 8 HOT DIFFERENTIAL (hysteresis)


A minor value makes HOT more sensitive by the extraction.With machine in Distribution
and MIR energized, after compressor release due to HOT operating, compressor is cut in
again when consistency indication displayed on monitor is lower than SET HOT minus
value set in this step.
It may be set 0 to 20.

P03 3 DELAY TTA


It is the time during which the beater keeps on running after compressor stops for HOT.
It may be set 0 to 20 seconds.

P04 10 TIMER CICL


Cyclic timer in Distribution.
Every 10 minutes ( programmed at this step ) the beater goes ON to check the ice cream
consistency.
It may be set 1 to 15 minutes.

P05 21 TRIMMER HOT


It’s a number automatically set after Auto-set-up procedure.
If the number is increased, ice cream consistency at the end of the production cycle will
dicrease.

Caution: to change this number, it is necessary to control the beater motor current that
must not exceed 110% rating value.

Hopper temperature TEV adjustment.
Using a precise thermometer with the probe put in the hopper, the reading on the display
must be equal to the value read on the thermometer, otherwise the value read on the

display must be adjusted by pushing Increase and Decrease buttons, so


that both readings match.

P10 0 TEC ADJUST


Cylinder temperature TEC.

P11 0 TGV ADJUST


Hopper evaporator temperature TGV (used to defrost the hopper).
This temperature must be adjusted as at P09 (the probe of a precise thermometer into the
probe-holder; found in the hopper evaporator).

Cylinder evaporator temperature (left side) TE1.
By one-cylinder machines, it is set at 90 in order to disable it.

• If an alarm is enabled, the machine will be protected by the same alarm.

• When an alarm is disabled, the machine will not be protected by the alarm and you will be working on your
own risk.
It might be useful to disable an alarm when a component is broken, for example, if the safety thermostat is
broken and its contacts are opened the machine will never heat up.
To bypass that temporarily, disable Alarm 04 : the machine will not care about safety thermostat.
Caution: after replacing a safety thermostat, remember to enable the alarm so as to protect your machine.

CPU BOARD REGULATIONS

• JUMPERS
CPU is provided with 3 jumpers JP1, JP2 and JP3 (see CPU layout).

JP1: Current transformer (T/A) selection


JP1 must be selected depending on current transformer.
In case of a red current transformer 1:1000 the jumper must be inserted into the internal position A.
In case of a black current transformer 1:120 (USA) the jumper must be inserted into the external position B
(see CPU board layout).

JP2
It must be inserted near keyboard flat cable connector.
It is for internal use in CARPIGIANI.

JP3: Temperature range selection


By self-pasteurizing machines, this jumper must be inserted in the “-34” scale (internal position).

• SERIAL PORT JP15

To make the software upgrade of the CPU, you must use the special serial cable, delivered by Carpigiani, that
connects the CPU (JP15, see CPU board layout) to the RS232 port of any Personal Computer (PC).
The software Upgrade can be done by transferring the new software from the computer to the CPU using the
Dloader Program delivered by Carpigiani.

• SOFTWARE UP GRADE

Connect your PC ( RS 232 ) to the CPU (JP15) and run the DLOADER program.
The new software you want to transfer to the processor must be resident in the same directory as DLOADER
program.

Push STOP and keep it down until the beeper keeps beeping and the display is all OFF; at this
stage the procesor is ready to receive the new software from the computer.

• TRIMMER R78

Trimmer R78 is used to adjust the sensitivity of the level sensors.


By turning the trimmer in a clockwise direction, you get a less sensitive level sensor and tend to turn OFF the
level led indicator.
By turning the trimmer in a counter clockwise direction you get a more sensitive level sensor and tend to turn
ON the level led indicator.

Attention:
If you turn the trimmer R78 excessively counter clockwise, you get ALARM AL01 RTA which means you
went too far from good regulations and must go back in a clockwise direction to remove RTA ALARM (and
push STOP / RESET button to refresh the display).

• HOT CALIBRATION

P1 self calibration button

To regulate ice cream consistency to the max. value, do as follow:

1- Fill the cylinder and hopper with mix.

2- Push Distribution button.

3- Push self calibration button P1 (see CPU layout) once (the beeper will beep intermittently).

4- Check the current of the beater motor with a clamp tester.

5- When the current read on the tester is equal to the value corresponding in the following table, press on the
self calibration button in order to conclude HOT calibration procedure and store the adjustment value
“TRIMMER HOT” at program step P05.
