Sloe Gin and Blackberry Cocktail © 6 2hrs 58°C Two Easy INGREDIENTS 1 Punnet of blackberries 500ml Sloe gin 500ml Blackberry liquor Y2 Lemon — juiced 6 Juniper berries — crushed 6 tbsp Hibiscus flowers — dried (optional) 1Clove 4 tbsp Sugar stock, see pickling METHOD 1. Pre-heat your water bath to 58°C. 2. Place all ingredients in a large pouch and fully compress. If you have an external vacuum sealer vacuum seal using a zip lock bag. 3. Now, put the pouch in the water bath for 2 hours. Make sure the bag is fully submerged under the water level. 4. Remove the pouch from the water bath and place in ice water for 20 minutes. 5. Strain off the liquid through a cheesecloth or fine sieve and keep to one side. 6. When required pour the cocktail over crushed ice and garnish with sous vide blackberries. Copiado al portapapeles
