Lesson Title: Pizza Demo & Lab (Yeast Bread)

Standard, Benchmark, Indicator 8.5: Demonstrate professional food preparation methods and techniques for
all menu categories to produce a variety of food products that meet
customer needs.
Lesson Goal 8.5.10: Prepare breads, baked goods and desserts using safe handling and
professional preparation techniques.
Content Lesson Objective(s) Students will prepare a pizza and discuss the function of yeast
Process Lesson Objective
Essential Question(s) Why is it essential to knead the dough for a second time before shaping and
baking?
New & Guarded Vocabulary Yeast, shaping the dough
Assessment and Criteria Students will fill out an exit ticket question to check for understanding.
Student must give two examples.
Kahoot that will check for understanding of the material.
Students will fill out lab reflection that reemphasizes what we discussed in
class over yeast breads.
Furniture/Materials/Technology Students will sit in their desk for while going over the directions. They will
Set-up then move closer to the demo station while I demo how to shape the pizza.
After, they will go to their kitchen to bake the pizza and then return to their
seats for the reflection while it bakes.
