Matgalne Korean BBQ Restaurant (Buffet and Ethnic
Restaurant)

Originated in Makati, the


restaurant opened its doors to Real,
Calamba, Laguna on March 2016.
Owned by a korean national, Ms.
Windy Park, Matgalne is a simple
“Hole In The Wall” restaurant that
serves authentic Korean food.
Matgalne is wonderful hidden gem that offers you not just an unlimited amount of
Samgyupsal,  but an incredible lunch and dinner buffet spread, consisting of about
25+ mouth watering side dishes to desserts.

Our experience at Matgalne was somewhere on the average. At first glance, the
exterior of the restaurant was bland. However, upon entering the room, the interior
of the place was very cozy and modern which I think most people prefer in a
restaurant. The seats are very comfortable, the table was big enough, and the
buffet bars are well-highlighted. Since it is a Korean restaurant, I expected that they
would feature foods from Korea. But I was surprised that there are sinigang, lechon
kawali, coffee jelly and buco pandan on the buffet.

On the contrary, I was disappointed when I went to the restroom, the urinal and
toilet was not cleaned properly and some of the tiles are broken. Also I noticed that
they aren't following kitchen standards like the sack of rice should be stored or
even placed on their kitchen floor, and they aren't using hairnet which can be a
potential hazard to their customer. They aren't following even just the proper
storing of food and even the utensils are just placed in a plastic container. I am also
not satisfied with their service. The staffs aren’t very hands-on with us.

Moreover, if being optimistic, the food is excellent. Comparing to the korean


restaurants I’ve eaten, the food from
Matgalne was one of the best foods I've
tasted. Their side dishes I think sets them
apart from their competitors. And also the fact that we were given discounts
because of the birthday.

Food and Beverages Trends


Based on my observation and understanding with the trends of the food and
beverages industry, the Matgalne Korean BBQ Restaurant has 3 trends being
executed. First trend that they do is the Good Enough to Tweet. Since the rise of
food-centric media, consumers rely on the pictures and reviews on social media.
The restaurant applied this trend by posting their foods and place so that people
can know what to expect dining at their place. The second trend applied is the Fat
Shed Stigma. Living in a Fat phobic society, fat is considered shameful. However
the restaurant diminish those stereotypes by letting people eat fat whenever they
like. They must have thought that some people find comfort in eating lost and lost
of food that's why they offered the unlimited Buffet, Samgyeopsal, and shabu-
shabu. Lastly, they exercise Eat with your Eyes . They entice their customers with
their mouth-watering buffet and samgyeopsal features in their page. And the fact
that they mostly serve foods with bold colors like the Rabokki, Kimchi, Kimbap, Egg
roll, and Potato pancakes.

Profitability Tactics
1. Discounts - the restaurant offers discounts to
those who celebrate their birthday. Its either the
celebrant is free or all of the companions are
lessed with 100 pesos.

3. Store - They have a mini store located inside their restaurant which customers
can chose korean products. They have kimchi, seaweed wrap, korean rice, fish
cakes, tteokbokki, and many more.
