To prepare caramelised onion for
freezing, slice 4 large brown onions.
Heat 40g butter and 2 tbs olive oil in
a large frying pan over medium-low
heat. Add onion and stir to coat with
butter mixture. Cook for 40 minutes,
stirring every 10 minutes, or until
onion is a rich golden-brown colour.
Add 2 tbs balsamic vinegar and stir
well to dissolve any sediment on base
of pan. Cool. To freeze, place mixture
into an ice-cube tray and, when

1 Preheat oven to 180°C. Grease and
line a 20cm springform cake pan.
2 Place milk powder into a food
processor and, with the motor
running, add butter and process
until combined. Press mixture
over base and sides of pan and
place onto a baking tray. Bake for
20 minutes or until crust is golden.
3 Process cream cheese in food
processor until smooth. Add honey
and, with the motor running, add
eggs and then egg yolks, one at
a time, until well combined, scraping
the sides of the bowl every now
and again. Add zest and lemon
juice and process until smooth.
4 Pour mixture over base and bake
for 50 minutes (the cheesecake will
still have a slight wobble).
5 Turn off oven and prop door ajar.
Cool for 15 minutes. Remove from
oven and cool for 30 minutes then
refrigerate overnight.
