Ingredients
• 400g Ingham’s Turkey • 1 can corn kernels,

• 2 tbsp olive oil • 1 tomato, chopped

½ bunch mint, leaves picked

1 Bring ¾ cup water to the boil in a small saucepan


over high heat. Stir in quinoa and return to the boil.
Reduce heat to low, cover with a lid and cook for
15 minutes. Remove from heat and stand,
covered, for 5 minutes. Fluff with a fork. Cool.
2 Working with 1 rice paper sheet at a time, dip
into a bowl of warm water until just softened.

To prepare caramelised onion for
freezing, slice 4 large brown onions.
Heat 40g butter and 2 tbs olive oil in
a large frying pan over medium-low
heat. Add onion and stir to coat with
butter mixture. Cook for 40 minutes,
stirring every 10 minutes, or until
onion is a rich golden-brown colour.
Add 2 tbs balsamic vinegar and stir
well to dissolve any sediment on base
of pan. Cool. To freeze, place mixture
into an ice-cube tray and, when
frozen, transfer to a snap-lock bag or
container. Freeze for 3 months.

MOROCCAN MEATBALLS

1 tbs olive oil


1 red onion, finely chopped

1 cup low-fat Greek-style yoghurt
2 tbs lemon juice
1 tbs chopped mint, plus extra sprigs to serve

1 Heat oil in a frying pan over medium heat. Add


onion, garlic and spices and stir for 3 minutes or
until softened. Transfer to a bowl and cool.
2 Meanwhile, preheat oven to 180°C. Line a
shallow baking pan with baking paper.
3 Add herbs, zest, mince, breadcrumbs and egg to
onion mixture. Season and mix together well using
your hands. Shape into walnut-sized balls. Arrange
in a single layer in pan. Spray with oil. Bake for
20 minutes or until browned. Drain off any excess
oil and cool to room temperature.
4 To freeze cooked meatballs, place in a single
layer on a baking paper-lined tray and freeze until
firm. Transfer to a container, seal, label and freeze
for up to 3 months.
5 To reheat cooked meatballs, add passata to
a large frying pan and bring to the boil over
medium-high heat. Add meatballs and reduce
heat to medium. Simmer for 25 minutes or until
meatballs are heated through.
6 Meanwhile, to make the yoghurt sauce, combine
all the ingredients in a bowl.
7 Serve meatballs with couscous, yoghurt sauce and
extra mint.

1 Preheat oven to 180°C. Grease and
line a 20cm springform cake pan.
2 Place milk powder into a food
processor and, with the motor
running, add butter and process
until combined. Press mixture

processor until smooth. Add honey
