whilst showcasing the Soups & Salads
talents and creativity of the Minestrone Verde with a Touch of Pesto - prepared with the best of what’s in season - $6
culinary program's senior Japanese Garden Salad - with citrus poppy-seed dressing - $7
students. Caesar Salad - our way, with pancetta crisps, garlic croutons and shaved parmesan - $8
Quinoa Tabbouli Salad - with feta cheese, tomatoes, mint and cucumbers - $8

B.C Spot Prawns- super and sustainable, poached in an aromatic broth with served with
jicama slaw, mango mojo - $12
Salmon Ceviche - wild B.C. salmon prepared in an Asian marinade and finished with a
cucumber-daikon salad - $9
A Trio of House-Made Dips with Breads - cannellini bean hummus, artichoke with spinach
and roasted garlic, and roasted red pepper with goat cheese - $7

Short Ribs Pasta- slowly mellowed in a red wine braising jus, and served in Pappardelle
noodles and spring vegetables - $15
Double Lamb Chop - roasted with a pepper crust and served with fingerling potatoes and
spring vegetables - $18
B.C. Halibut - seared and oven roasted and accompanied with warm fennel-tomato salad
and toasted orzo pilaf - $18
Fraser Valley, Free-Run Chicken Breast – grilled and served with gnocchi and spring

Pulled Pork, Vietnamese Style – served with marinated vegetables, cilantro, scallions
and a spicy barbeque sauce on a baguette - $10
The 6 Oz. Art Institute Beef Burger – alongside house-made pommes frites and topped with
